Cheesy Potatoes II

Reviewed: Aug. 10, 2015
The family really enjoyed this recipe. I followed suggestions from other reviews and added half the sour cream and added ham and diced onions as well. I didn't have any processed cheese on hand but added some cheddar to the mix and then layered cheese on top. My husband suggested next time to crush up some frenchs onions and put them on top for some crunch next time. I served this as a meal with biscuits. I would recommend leaving it in a little longer in the oven, was not quite hot enough in the very middle.

Chicken Cordon Bleu

Reviewed: Feb. 9, 2015
My new favorite chicken cordon bleu recipe! I made it as called for except I found out a little late I was out of bread crumbs so I crushed up some unsalted crackers and added a little seasoning to substitute in. The whole family loved it! Next time I'll make more, there wasn't a single piece left over.

Bacon-Wrapped Scallops with Cream Sauce

Reviewed: Feb. 14, 2014
This is my third time making these, they came out awesome. I used precooked bacon this time to make it a little crunchier, was too soggy previously. Worked out great.

Awesome recipe! Husband had me make him up another after he devoured the first. :-) I halved this recipe and used 1.2 lbs of meat and got 4 good sized patties and the aprox calories in one that size is 200 (according to myfitnesspal) with 8.2 grams of fat, 80 mg cholesterol, 167 sodium, 13.5 potassium, 3.6 carbs, 22.7 protein, 4.8 calcium, 7.3 iron

The Best Meatloaf

Reviewed: Sep. 17, 2011
Awesome recipe! Was very moist, not a dry meatloaf at all! I did half the recipe as I was only cooking for 2. In an effort to cut out a few calories I used egg white instead of whole eggs and whole wheat bread crumbs I made. This cut the calories down to aprox 200 per serving (according to myfitnesspal.com) as I estimated half the recipe to yield 4 1-in thick servings. Husband declared the recipe a keeper!

Pork Medallions

Reviewed: Sep. 16, 2011
My first try at pork tenderloin and it was a total hit! I didn't change anything and it turned out marvelous, even my 5 year old couldn't get enough! On my second try with this recipe, instead of using sliced onions, I used green onions. Turned out just as marvelous :-)

Campbell's® Slow-Cooker Chicken and Dumplings

Reviewed: Aug. 31, 2011
Awesome recipe, I've made it 3 times and its gets better every time. I used refridgerated biscuits quartered, cooked on high for the last hour and it turned out great. Be careful not to stir it much after you put the biscuits in though, I did the first time I made it and it came out more like a chicken pot pit instead of dumplings. :-) But still tasted wonderful.

Very yummy, just like my mom made when I was a kid. Just be careful of the gooey strings from all the syrup, have plenty of napkins handy for this!!!

Easy Peach Cobbler II

Reviewed: Nov. 16, 2010
I was skeptical about this one but was in a hurry for a desert. Well... 3 people managed to kill it, only crumbs were left! :) I did read the other reviews and cut down the sugar to 2/3 cup, then added about 1/3 cup brown sugar and 1 1/2 tsp vanilla. after putting it all together I sprinkled the top with cinnamon. WOW! I'm making it again this weekend.

Always a big hit in my house. I'm asked to cook it every few weeks and there are always leftovers for a few days. I did add a good bit of soy sauce to the meat as well as a few spices when browning to add more flavor.
