Clone of a Cinnabon

OMG! Here were my changes: I don't have a bread machine, so I did as many others had suggested with the warm liquid and yeast till foamy, adding the rest of the ingredients into my Kitchenaid w the dough hook. Kneaded by hand then let rise in a warm oven. I think the major change I made was that I used THREE heaping tablespoons of cinnamon- very much like cinnabon, ESPECIALLY when re-heated in the microwave! WOW!

Sausage Casserole

YUM! Changes: I used chicken and turkey breakfast sausage, 8 extra large eggs, fresh sage, pepper and a Trader Joes smoked cheese mixture. Teenagers and adults both enjoyed it for Xmas brunch!

Mom's Buttermilk Biscuits

Very light but not flaky. Kinda dry yet still fatty from shortening. Yummy, clean taste. I did drop style. Altered to 1/2 t. soda and 2 t. powder. These were good but I'm still searching for the 'perfect biscuit'; maybe I need to investigate technique.

Healthy Banana Cookies

I love how guilt-free these are... although I added a little guilt ;) I'm sure this recipe would have been fine on it's own, but maybe a little bland. These taste to me a bit like a granola bar type cookie. So, if you're looking for a fix for your sweet tooth, you won't find it here- think HEALTHY. I have a hard time not changing recipes, so here is what I did: added 1/2 C. flaked coconut (sweetened), 2 T. ground flax seeds, 1 C. semi-sweet choc. chips & 1/2 C. toasted chopped walnuts, 1 teaspoon cinnamon; I also reduced the oil a bit and added some applesauce to make up the difference. The cookies LOOKED like they had more chocolate than they really did because of the dark date pieces. Next time I might try adding some peanut butter and mini chips instead of the regular choc. chips, that sounded good. They don't crumble too badly, just a little on the edges if the cookie isn't shaped properly prior to baking.

Carrot Cake III

RAVE reviews all around the office! I made half the sugar brown instead off all white like others said. I also added 1 C. coconut and a small can of (squeezed) crushed pineapple and substituted walnuts for the pecans. I made it into a round layer cake; the 2- 9" layers were dense, but I think I would have liked it to be a little higher- maybe next time I will do a double recipe and make 4 layers... leaving one to keep at home ;) Oh, I almost forgot, I sub'd 1/2 C. applesauce for 1/2 C. of the oil like many others did. Beth's Spicy Oatmeal Raisin Cookies

Mm MM MMM!!! Yummmmmy! I made mine kinda big so they had to bake a little longer, but there is no need to shape these cookies they spread and form just perfectly. I'd love to tell you how they keep but I don't think they will last through tonight- taking them to a potluck.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were great, I think so far they are nearing the pinnacle of chocolate chip cookies. I am careful to almost under-cook these as I am learning this is the trick to chewy cookies (which is my aim). I think they were a bit on the sweet side, so I might try them again and start tweaking.

ABC (Absolute Best Chewy) Chocolate Chippers

These cookies were a bit cakey for me. I was really looking for a chewy cc cookie. They do look so pretty it's almost unreal, but I go for texture above all. I will try "Best Big, Fat, Chewy Chocolate Chip Cookie" next; stay tuned!

Delicious Raisin Nut Banana Bread

yummy! almost can't stay away. too sweet for my healthy tongue (next time I'll reduce the sugar even more). good with whole wheat flour. I used regular Post raisin bran cereal. I substituted 1/4 c flax seed meal for equal portion of flour, added raisins and walnuts and cinnamon, and reduced the sugar to 1/2 C.+ raw sugar. Sorry guys, I find it really hard to bake some things without putting my own spin on it :)

Campbell's Kitchen Beef Stroganoff

This is so basic and easy, even my picky kid liked it. *snicker* He thought the portabello mushrooms I added were beef! I used VERY sweet onions and practically burned them giving it a rich sweet flavor. I agree that the sauce is too thick, however after I added a little Worcestershire sauce, I think it was fine. I think the proportions I used were: a big can (it said '45% more') of Campbells Cream of Mushroom soup and about a cup (maybe more?) of full fat sour cream.

Banana Cake VI

This is a delicious, but very heavy/dense cake; very moist (almost gooey, I swear- it was cooked all the way!). Rave reviews all around the office (I made it for a birthday into a layer cake drizzled with caramel). I had to extend the frosting a bit and I put sliced bananas in between the layers.

Best Brownies

I don't know if these are THE best- but they're close... and easy. I did a double batch: half the batter with mint chocolate chips and the other half with toasted walnuts and white chocolate chips (the white chips fell to the bottom and stuck- need to do something about that next time). I did not make the frosting. These are very moist brownies if cooked right. I think I'm still in search of a DARK rich (but not as greasy) brownie. I think I'll try a recipe with dark chocolate chunks next time.

Brooke's Best Bombshell Brownies

I was hoping for THE perfect brownie. I like really chewy brownies and I think I baked these too long (even though I followed the directions for the 'toothpick test'), although the sides did soften overnight and they were better the next day. It was almost there, although, I can't say I've baked a LOT of brownies in the past. These were a 8 or 9 out of 10 for me; a touch too sweet. I think these were the right thickness for the pan (about an inch, finished). So, these were a touch too dry for me. I got a request for nuts next time- this recipe is definitely for the purist.
