Waffles I

An excellent, easy base for fabulous waffles. I substituted apple sauce for half the vegetable oil and doubled the sugar and vanilla. I also added cinnamon and nutmeg and orange extract while using half whole wheat flour and half white. They turned out great and I served them with cinnamon/sugar butter, maple syrup, strawberries, bananas, and whipped topping as options. Desert and dinner all in one! The family loved it.

Best Toffee Ever - Super Easy

This was the first time I've ever made toffee, so just bear that in mind. Even though I whisked the mixture the whole time, the butter still wound up separating like mad, and in the end I had to siphon it off when I poured the toffee into the pan. Also, it seemed to separate more the longer I cooked it, so I didn't get quite the color or taste I wanted. That said, this was a fairly easy recipe, and the toffee turned out pretty well. How can you go wrong with butter, sugar, and chocolate? :)

Chicken Fiesta Salad

This was great - and super easy. We had it all together in about twenty minutes. Threw some cilantro in, like others, and thought it added to the recipe. Didn't use as much salsa as it called for, but by the time the chicken got mixed with everything else, I didn't think it made a difference.

BBQ Chicken Pizza I

Very easy and definitely good enough to give California Pizza Oven a run for their money. I used a homemade crust and thought it made all the difference, but your family's preference is entirely your business. :) Enjoy!

Chocolate Angel Food Cake II

This. Is. Fabulous. I had a little trouble getting the stiff peaks the recipe calls for, but having made a few angel food cakes before, I just forged ahead and hoped it would taste the same. It rose a little in the oven, and came out beautifully. Like the biggest, prettiest chocolate meringue cookie you've ever seen. My family couldn't keep their hands off it. My one caution is to really let it cool in the pan completely - I didn't, and mine fell out of the pan and cracked when I flipped it to cool.
