Chicken Enchiladas

Home run! I was worried that the sour cream taste would be too strong, but it wasn't at all! The cheese blends in with the sour cream and cream of chicken to taste like nacho cheese. I used Sargento's Mexican blend. Overall, an awesome, easy to make dish with lots of color!

Spanish Rice II

Yummy! I used chicken broth instead of water based on other recommendations. I also substituted red bell pepper for the green because that's all I had on hand. Tasted a lot better than the boxed rice!

Pasta Hot! Hot! Hot!

Boring. I served this with tortellini and peas, and it was still boring. It's a good recipe when you're too lazy to make a trip to the grocery store, but that's about it.

Meatball Nirvana

Awesome flavor! I used 73% ground beef (only because I got 5 lbs for $6). I made meatballs of all sizes to freeze in sauce. I used disposable pans so I wouldn't have to scrub greasy pans afterwards. Will make again.

Cheeseburger Meatloaf

Pretty good. It was easy to roll up with the wax paper. I overlooked the step that said to fold the ends, so some of the cheese oozed out - but it at least made good cheese crusties on the edge of the pan! I used 80% lean ground chuck because it was on sale - I wasn't sure what kind of ground beef to use since I never make meatloaf. Anyway, quick and easy!

Mexican Style Shredded Pork

The pork was delicious! I halved the recipe and reduced the cooking time to 4 1/2 hours. So tender! I used 1 1/2 peppers in adobo sauce instead of plain sauce. Looking back, I guess I forgot to add the 1/4 cup water. The rice that was recommended was NASTY. I'm giving the recipe 5 stars because the title says Mexican Style Shredded Pork and doesn't mention the rice. I'll definitely serve the pork again, but this time I'll serve it with corn tortillas.

Egg and Sausage Casserole

Pretty good. A little rubbery, but I think I have bad luck with egg casseroles in general. I used 10 eggs and half the cheese based on everyone else's recommendations. I also used reduced fat sausage. I'd make it again though.

Beef and Irish Stout Stew

I wanted to love this recipe, but in the end it tastes like all the other beef stew recipes. It's good, just not amazing. It is a good excuse however to keep Guinness in the fridge. And in my glass.

Mud and Worms

It's just fun to say you're eating mud and worms!. It's a cute and easy dessert but a little bland. Maybe I'll use a different brand pudding mix next time.

Pita Chips

I really liked the texture of these - I halved each pita to make each chip one layer and cut each half into eight wedges. I used multi-grain pitas. I misted them with olive oil and used garlic salted, red/black/green peppercorns, and Crazy Jane's Mxed-up Salt. I put them in the toaster over 6-7 and flipped them over. I gave them another spritz or olive oil and seasonings and put them back in another 4-5 minutes. Awesome!

Slow Cooker Creole Black Beans and Sausage

Good way to clean out the refrigerator. Not the most exciting meal, but slow cooker meals always get a thumbs up for being convenient. I was pressed for time so I didn't brown the sausage first. And I left out the celery. I'd make it again.

French Beef Stew

Home run! I usually think beef stew is boring, but I always keep my fingers crossed that I'll find the perfect recipe - this is it! I used fresh rosemary instead of thyme. I deglazed the bottom of the pan with a little bit of the beef broth after browning the meat before adding everything else. I stirred in the mustard with all the other ingredients instead of at the end. So tasty - I just wish it was winter right now!

Honey Mustard Dream Delight Pork Chops

Delicious! I was out of cayenne, but I followed the rub ingredients exactly besides that. I put it all in a bag like Shake N Bake to make the cleanup process a little easier. The brown sugar in the rub made the chops brown quickly - I'd probably use a little less next time. I waited to baste the chops with the honey the last few minutes so they wouldn't burn. Very tasty!

Baked Garlic Parmesan Chicken

Pretty good. I mixed it up Shake N Bake style (I hate dishes). The bottom was a little soggy, but the flavor was pretty good. I felt like it could use a little more kick though. Salt? Quick and easy nonetheless.

Healthier Restaurant-Style Buffalo Chicken Wings

I can't say they were amazing, but they gave a good base to work with. I'm sure after trying some of the other recommendations I'll be able to give it 5 stars. They were very tender though. I'm curious what hot sauce others used. We used Sriracha, which wouldn't have been my first choice, but sometimes you have to go with what the pantry says. Overall, I like that they are baked and not fried. Now I have extra calories to spend on beer.

Milk Chocolate Peppermint Bark

This is one of the only sweet treats I have made in several years and I didn't screw it up! Ghiradelli semi-sweet chocolate chips, generic white chocolate chips, and generic extract. Didn't separate like some said theirs did. I halved the recipe and used an 8x8 pan. Thanks for the easy recipe!
