Gnocchi I

A fancy way to use pantry basics! I used a little less flour, based on other people's recommendations. I had never made gnocchi before, and they came out just right. I served it with pesto sauce.

Pesto Sauce

It was okay - WAY too many walnuts - and I used half of what the recipe said. It's a little bland for my taste, but I'm sure a little tweaking could save this recipe.

Seven Layer Taco Dip

Even better the next day! If I made it again I might use less sour cream/cream cheese mix, and maybe a little less taco seasoning, but over all a very pretty presentation in a glass bowl.

Mexican Style Shredded Pork

The pork was delicious! I halved the recipe and reduced the cooking time to 4 1/2 hours. So tender! I used 1 1/2 peppers in adobo sauce instead of plain sauce. Looking back, I guess I forgot to add the 1/4 cup water. The rice that was recommended was NASTY. I'm giving the recipe 5 stars because the title says Mexican Style Shredded Pork and doesn't mention the rice. I'll definitely serve the pork again, but this time I'll serve it with corn tortillas.

Baked Garlic Parmesan Chicken

Pretty good. I mixed it up Shake N Bake style (I hate dishes). The bottom was a little soggy, but the flavor was pretty good. I felt like it could use a little more kick though. Salt? Quick and easy nonetheless.

Boring. I served this with tortellini and peas, and it was still boring. It's a good recipe when you're too lazy to make a trip to the grocery store, but that's about it.

Spanish Rice II

Yummy! I used chicken broth instead of water based on other recommendations. I also substituted red bell pepper for the green because that's all I had on hand. Tasted a lot better than the boxed rice!

Chicken Enchiladas

Home run! I was worried that the sour cream taste would be too strong, but it wasn't at all! The cheese blends in with the sour cream and cream of chicken to taste like nacho cheese. I used Sargento's Mexican blend. Overall, an awesome, easy to make dish with lots of color!

Cheeseburger Meatloaf

Pretty good. It was easy to roll up with the wax paper. I overlooked the step that said to fold the ends, so some of the cheese oozed out - but it at least made good cheese crusties on the edge of the pan! I used 80% lean ground chuck because it was on sale - I wasn't sure what kind of ground beef to use since I never make meatloaf. Anyway, quick and easy!

Basic Microwave Risotto

Super easy way to make risotto! I loved that it didn't require constant attention. I used chicken broth instead. It was a little pasty, and the wine flavor was a little too much for me, but overall pretty good.

Honey Mustard Dream Delight Pork Chops

Delicious! I was out of cayenne, but I followed the rub ingredients exactly besides that. I put it all in a bag like Shake N Bake to make the cleanup process a little easier. The brown sugar in the rub made the chops brown quickly - I'd probably use a little less next time. I waited to baste the chops with the honey the last few minutes so they wouldn't burn. Very tasty!

Southwest Chicken Salad II

This is a quick and easy dinner. I grilled some pork tenderloin and cut it into strips instead of using chicken. I omitted the cabbage, and used red bell pepper instead of green. I also substituted Southwest ranch for regular ranch. This salad goes well with a dab of salsa on top.

Sausage Hash Brown Bake

My favorite breakfast casserole! I use reduced fat sausage. If I am out of sour cream, I just double the cream of chicken soup. Frozen hash browns can be thawed quickly in the microwave. I usually half the recipe. Be sure to cook the dish the full amount of time so the onions cook all the way. (It is just as good if you leave the peppers onions out.) Even better with a side of fruit or a yogurt smoothie!

Fiesta Chicken and Rice Wraps

I didn't have instant rice, so I cooked regular rice separately and mixed it all together. Definitely better with cheese. Either way it is a pretty good, simple recipe.

French Beef Stew

Home run! I usually think beef stew is boring, but I always keep my fingers crossed that I'll find the perfect recipe - this is it! I used fresh rosemary instead of thyme. I deglazed the bottom of the pan with a little bit of the beef broth after browning the meat before adding everything else. I stirred in the mustard with all the other ingredients instead of at the end. So tasty - I just wish it was winter right now!

Sausage Jalapeno Poppers

Good make-ahead appetizer! I assembled them and refrigerated them overnight, and added 10 minutes to the cooking time. I used reduced fat sausage and reduced fat cream cheese. I added a cup of reduced fat shredded cheddar to the filling. I didn't wear gloves when cutting the jalapenos. It wasn't until 30 minutes later that my skin started to burn (for the next 12 hours). I had to be extremely creative in finding a way to take out my contact lenses! So bottom line, as nice as it is to save a dollar, the gloves are probably a good investment. Besides that, I'll make these again. They'd be good for company and they hold up well in the fridge overnight before baking. Very attractive little snacks!

Bean 'N' Beef Crescent Pie

Not bad. Very easy to make. Little cleanup involved. I used 6 ounces of reduced fat cream cheese, about 2/3 cup salsa, and a whole can of refried black beans. I sprayed the baking dish with PAM before laying down the crescent rolls. I served it with a Mexican side salad.

Shepherd's Pie Daddy's Way

Super easy! I added a cup of garden peas and a dash of worcesterchire sauce. I used shredded cheese instead of sliced, and regular cream of mushroom, not golden. Looks pretty on the plate! I think it would go well with a pint of Guiness...
