Classic Waffles

These were a great Mother's Day treat. My son and I made them together. We took the suggestion of folding in the egg whites. I wish I had some berries or bananas to add to the batter, but they were very good non-the-less. These were tremendously better than the bland recipe that came with the waffle iron. I will definitely make this recipe again.

Leg of Lamb

Very. very good. This was a hit for Christmas dinner! I also had a butterflied boneless leg of lamb. I put regular yellow mustard on one side and dijon on the other. I made slits in the meat and stuck pieces of fresh garlic in. I did the dusting of flour . . .it made a beautiful coating. Everyone loved it.

Cranberry Orange Cookies

These were wonderful and easy to prepare. We will definitely make these again! We did not put the glaze on the cookies. . . they were great without the glaze.

Kathy's Southern Corn Pudding

It seems that this dish is often served at church functions in NC. It is so good! I made this for my family this week and EVERYONE loved it (even my 2 yr old grand-daughter). The only thing was it had a bit more liquid than it should have. I drained the corn and baked it all for 90 mins., but still watery. I drained the casserole and baked it a bit more and it was great. I also added a little bit of black pepper. Very good!

Busy Day Chicken Rice Casserole

Since some folks said this recipe was bland, I added fresh herbs that I had growing on the porch - sage and rosemary. I think it was too much & probably would have tasted better bland. In either case, my family did not like the consistency of this dish. Rice too sticky. Kinda all like chicken mush.

Zucchini Bread IV

I added a 1/4 tsp. of nutmeg and also a handfull of raisins. My family could hardly wait for the loaves to cool. We polished off an entire loaf within 10 minutes. We will have the other loaf in the morning for breakfast! This recipe is a definite keeper!! Thank you!

Seven Layer Taco Dip

I added a layer of guacomole and also garnished with jalepenos. My family loved this. We only used 1/2 the sour cream and cream cheese mixture - saved the rest to put on baked potatoes. I also used Amy's Vegetarian Refried Beans (no lard).

Crab Imperial II

I really liked this recipe. The results are very close to what would be served in a seafood restaurant in MD. I did not put more salt since I knew Old Bay had salt in it. I also added parsley and paprika to the bread crumb topping (looked pretty). This recipe is a keeper.
