I am a newlywed and just now learning to cook! I am a secretary at an elementary school. We enjoy having church friends over for dinner, often at the last minute, so I'm always looking for recipes with ingredients that are easy to keep around the house just in case.

Pollo Oaxaca

The very best thing I've ever cooked. Absolutely delicious! I halved the recipe and it turned out great. I didn't change anything. I thought there would be a ton of prep (chopping, etc.) involved, but using a blender/food processor made it so quick and easy. I served it with rice and refried beans.

Southwestern Black Bean Stew

Delicious! I used all my leftovers from taco night (ground beef, corn, and black beans) to make this -- a great way to turn the same ingredients into a different meal! Not leftover-y at all. Like other reviewers, I also used a can of diced tomatoes (the kind with onion and garlic) instead of the tomato paste. Added some spices and it turned out great! I also served it over rice.

Pan-Seared Tilapia

AWESOME! So light and wonderful. It went great with brown rice and broccoli. My husband loved it. I did add some lemon juice at the end, but otherwise I followed the recipe exactly. I will definitely make this again (and often!).
