Whole Wheat Ginger Snaps

I used this recipe as a base for a mock ginger snap. To make them super healthy without losing the flavor I made the following changes: coconut oil for butter, two very ripe bananas & 1/4 cup of turbinado sugar for the white sugar and 1/2 wheat & 1/2 oat flour. They were devine! Although this rating isn't exactly for the listed recipe it helped a great deal with making healthy, flavorful cookies. I intend to make the actual recipe for guest but as for me, myself & I, its a must I cut the calories.

Chef John's Cream Cheese Frosting

Very good frosting that can be used on different cakes because its so basic & simple. I doubled the recipe and adjusted the sugar to taste for my Lemon Cupcakes, therefore I did not add the optional lemon extract. The cream cheese is definitely more pronounced then the sugar and butter, which is exactly what I wanted. Kudos to the trusty Chef John who wisely points out that the amount of sugar would vary. Other recipes I looked at list a specific amount of sugar which is a no-no for frosting (IMO). It all depends on your preferred taste palette. Of course, the trick is to add a little at a time, taste and repeat. Thanks Chef John!

Lemon Pudding Cake II

I was very suprise how good this turned out, which was more like a cake custard. The ingredients seemed too skimpy to make a "cake" and halfway through prep I got concerned, but it turned out great. I did make minor changes: used 1/2 cup of sugar, lemon extract instead of lemon zest & almond milk and I didn't even whip the egg whites all the way through. Yummy!

Oven Scrambled Eggs

This was awesome! I only made four servings, down to 8 eggs as I couldn't fathom using 24 eggs, and I added green and red peppers, onions and cheese. This will definitely be a staple in my home. Thank You!!

Microwave Oven Peanut Brittle

This is simply the best brittle I've ever tasted! Super easy & mess free. I followed Ateya from Youtube's cooking instructions: microwave peanuts [I used mixed nuts, a little over a cup], sugar, salt & syrup for 6 minutes. Add butter & vanilla, then microwave for 2 minutes. Finally add baking soda, mix well & pour onto pan. Enjoy!!!

Pecan Pie III

By far, this is the best pecan pie I have ever tasted. I felt so proud when my boyfriend, whose favorite dessert is pecan pie, loved it. As for the flour/butter mix, I halved the suggested amount and mixed them together before putting it in the rest of mixture...Absolutely PERFECT!

Cajun Style Baked Sweet Potato

A very unique twist to ordinary sweet potatoes. These were super easy to make, less calories and very good. The spice blend was perfect. The only adjustment I made was sprinkle more brown suger on top to put the "sweet" back in sweet potato. Yummy!!!!

Veronica's Apple Pancakes

Great recipe!!! My nieces loved them so much (no kids:) The only adjustment I made was add extra cinnamon to the batter. I may never make ordinary pancakes again.
