Pumpkin Pancakes

I've made this recipe twice now-so easy and I have all of the ingredients on hand! (I keep portions of pumpkin in the freezer and just thaw out in the microwave). These are great. I'm still toying with how to make it less dense, though maybe that's just pumpkin pancakes? I've added pecans or chocolate chips to the batches I've made-delicious!

Best Big, Fat, Chewy Chocolate Chip Cookie

I made these with whole wheat flour, so I can't judge the recipe as stated. They were great though. Followed suggestions and sifted and allowed them to cool. Made them using 1/4 cup measuring cup. Wonderful as big cookies! No need for more than one at a time.

White Chili with Ground Turkey

I subbed the cannellini beans for pinto because it's all I had and added some tomatoes. Still turned out pretty good. I was very cautious about the cinnamon, but it created a wonderful contrast with the cayenne.

Italian Breaded Pork Chops

Amazing. I forgot the milk and used garlic salt in the bread crumb mix instead of the minced garlic cloves in the oil. This is my top pork chop recipe ever. Amazing!

Vegetarian Spaghetti

We're easing into eating less meat and this was a yummy, and very easy recipe. I really liked the garbanzo beans in the pasta. I did make some alterations using what I had on hand. I didn't use celery because I didn't have any. I also didn't used onions because my husband doesn't like them. I used onion powder instead. Instead of the celery I used defrosted bell pepper mix and chopped zuchinni. I also added more spices like basil, parsley, rosemary, and crushed red pepper flakes. Yummy!

Butternut Squash Casserole

This is lovely. If you're unsure what to make with butternut squash, make this. I made the modifications of using less sugar all around and using honey bunches of oats instead of the wafers (I didn't have any on hand). It's delicious! Next time I'm going to experiment with maple sugar or honey instead of the brown sugar and adding more spices to cinnamon or nutmeg.
