Blue Cornmeal Pancakes

I've made these pancakes so many times that I figured I should review it. Ubergrrl deserves 5 stars for such an awesome recipe. Thank you! I use yellow cornmeal instead of blue and the hotcakes have always turned out delicious. Instead of using pine nuts, I always throw fresh or frozen blueberries in right after I pour the cakes on the griddle. I recommend trying this! I experimented with leaving the sugar out since I thought that the cornmeal would already be sweet enough. Not a good idea! Leave the sugar in. It's not a huge amount anyways.

Vegetarian Tortilla Soup

I loved this soup...I loved it so much that I ate it until I got sick! It was that good. I substituted the frozen and canned tomatoes with fresh and topped it with sour cream since I'm from Wisconsin and we find a way to put dairy on everything. I have to say, the best part about this soup was setting up a "customize your soup" area on my countertop when I served it. Fun to make, fun to eat.

Very Veggie Lasagna

I have made this lasagna quite a few times now and I've gotta say- it's a pretty good recipe. I have substituted various vegetables and it always turns out pretty good. I love lasagna and never used to eat it since it's rather naughty and I don't want to get pudgy... but not anymore now that I have this recipe! The mass amounts of veggies eases some of my guilt.

Blueberry Waffles with Fast Blueberry Sauce

YUM. This review is only for the blueberry sauce- I didn't make the waffles. Anyways. It's good! It's easy! Make it! Next time I'll double the recipe since I was very, very sad when the sauce was all gone.

Vegetarian Meatloaf with Vegetables

I don't cook with meat and have been craving meatloaf for quite awhile so I was pretty excited to try out this recipe. I turned out just okay, but it could be because I made a modification- I substituted bread crumbs for cubed bread. Also, I left out the surrounding carrots and potatoes and just made the meatloaf. If I make it again, I'll use mushroom gravy as an accompaniment.

Italian Vegetable Soup

This was soup was meh. I substituted fresh tomatoes and green beans since I try to use canned food as little as possible. Regardless, it was nothing special.

Jamaican Spinach Soup

This soup was delicious and easy to make. I have made it several times now and have a few recommendations. Use sweet potatoes instead of regular potatoes. Don't use sugar since the sweet potatoes are naturally sweet. Use extra spinach and add it at the very last minute so it wilts. If you add it earlier, it gets kind of slimy and gross. I never puree it since I love chunky soup!

Spinach Enchiladas Verde

Super easy and tasty. I gave up trying to roll the tortillas after awhile and just layered them. If I made it again I would add black beans, rice, and mushrooms and eat it with a Lactaid chaser.

25-Minute Tunisian Vegetable Couscous

My complaint with this recipe was the cardamom and paprika seemed WAY too overwhelming. My husband and I weren't able to eat more than half our plates before getting sick of the flavor. I think it needed some tomatoes too.

This bread was easy to make and almost perfect- the fatal flaw was that it was a little too lemon-y for my tastes. If I made it again I'd half the amount of lemon extract.

Couscous Pepper Cups

I'm quite pleased with the way this recipe turned out. I left out the garlic (husband is allergic,) turmeric, and substituted raisins with dried cranberries and the couscous was still very flavorful. I noticed that some of the other reviewers remarked that there was too much stuffing- I had the opposite problem since I was using monster organic bell peppers. I'll definitely make this recipe again and double the couscous since it was so delicious that we wanted seconds.

Lentil Soup

I cannot rave about this soup recipe enough - it is SO GOOD. It has all the necessary qualities that make a recipe good: healthy, easy, and easy to adapt to one's own tastes. I left out the vinegar since I didn't think it needed it and added lots of extra spinach and it was still terrific. I'll definitely make this one again.

Veggie Pot Pie

Excellent recipe! I followed the other reviewers' advice and added a couple extra tablespoons of cornstarch and the sauce turned out perfect. I omitted the onions, green beans, and garlic and substituted it with broccoli and onion powder. You can very easily change the vegetables to suit your own tastes. Next time I make it I plan on using less black pepper as it was a tad too much. This recipe is vegan, but it's so rich you can't tell!
