Quiche Supreme

I only made one quiche instead of two and made a few changes to the recipe to make it healthier and more flavorful. It turned out amazingly tasty! Instead of the can of mushrooms I used a cup of sliced portabello mushrooms, I only used one cup of fat free mild cheddar cheese, one cup of fat free sour cream, 2 full eggs + the equivalent of two eggs in only egg whites, 4 oz of low sodium cubed ham, no vinegar, no terragon, added a pinch of dill, 1/4 teaspoon of red pepper flakes, a pinch of salt and 2 cups of spinach. Tasty and healthy! It was a success with my husband!

Chunky Cheesecake Brownies

Delicious! I followed the recipe and it turned out great. A friend of mine will make if using splenda instead of sugar and I really look forward to tasting her as well. For those having diabetis, it could turn out great as well.

Pressure Cooker Italian Chicken Soup

This soup is very rich and healthy! I used 5 Italian turkey sausage links and added black pepper and red pepper powder. It gave it a hint if spicyness. I also added one can of diced tomatoes with no salt added and with garlic, oregano and basil. Since the recipe as is is very high in sodium per serving, I boiled the lentils and the garbanzo beans myself in water with no salt. I added one cube of chicken bouillon and it turned out perfect and even healthier. The barley helps to reduce cholesterol and by boiling the beans myself, it was low in sodium too. Perfect! Also, one tip: don't add the parsley until you are ready to turn off the heat. Parsley is a great antioxidant; however, if you boil it, it loses all properties. The same for the spinach.

Vegetarian Moussaka

I gave this dish 5 stars because it really tastes great. However, I did make a slight change: instead of frying the eggplant and the zucchini, I grilled them. And since I ended up with not enough eggplant and zucchini slices to actually have 3 layers, I suggest using one more eggplant and one more zucchini. Other than that, great recipe!

The Best Vegetarian Chili in the World

This is better than any chili I ate so far. My husband and I don't like our food very very spicy, so I only used 1 jalapeno and I did not use the chopped green chili peppers at all. Having only one jalapeno, black pepper and chili powder was perfect. It ended up spicy, and still eatable. I also replaced the vegetarian crumbles with smoked turkey drumsticks. Really tasty...

Morning Glory Muffins I

Baked Penne and Smoked Sausage

My boyfriend and I are considering eating more meat and instead of using sausage, I used mushrooms. The taste was amazing! We really liked it and will definitely cook it again.

Whole Wheat Sweet Potato Muffins

The recipe is very good! However, I had to leave them in the oven 10 minutes extra and with the quantities above, I only made 12. But the recipe is very good. Very tasty and flavorful!
