Eggless Pasta

Reviewed: Feb. 24, 2010
Good egg-free recipe. Used half semolina and half white whole wheat flour. Used the dough cycle of my bread maker to do the kneading work. Looking forward to trying with some vegetable paste as recommended by another reviewer

Banana Crumb Muffins

absolutely delicious! As with any muffin batter don't overmix. Applesauce does NOT work as a substitute for the oil in this recipe, it makes them too tough.

Oatmeal Waffles

Very good flavor. Surprisingly light. I was out of molasses so used honey instead, added 1 tsp vanilla and about 1/2 tsp cinnamon. Beat the egg whites before adding. The toddlers in the house loved it!

Creamy Au Gratin Potatoes

Reviewed: Nov. 20, 2010
Very Yummy - I will never buy boxed au gratin potatoes again! I was pinched for time, so I sliced the potatoes very thin and baked a little hotter - they finished in just about an hour. Used cheddar and monterey jack mix for the cheese sauce. Topped with panko bread crumbs and parmesan cheese for the last 10 minutes.

Mulligatawny Soup I

Reviewed: Jul. 20, 2012
Great soup! Followed the recipe almost exactly. Used only about 1-2 tbsp of butter to saute the veggies. Also added corn cut raw from the cob. Used Granny Smith apple which held its structure nicely --not mushy. Cut the chicken in cubes and blanched in chicken broth before adding to the soup. Added a splash of whole milk to each bowl before serving. Will definitely make again!

Rich and Creamy Tomato Basil Soup

Reviewed: Sep. 5, 2010
very good. used tomatoes and basil straight from the garden. Cut back the butter and used whole milk and was still yummy. Husband thought basil taste was a bit overwhelming so will use less next time for his sake but I thought it was just fine. Wish I had enough tomatoes to freeze a batch of this soup.

Elaine's Sweet and Tangy Loose Beef BBQ

Reviewed: Aug. 22, 2010
Very good - enjoyed by adults and toddlers alike. Reduced ketchup to 1 cup. Mixed leftovers with enchilada sauce, carrots, potatoes, peppers and onions and wrapped in tortillas - sprinkled with cheese and broiled for a few minutes. Very tasty both ways! Will make again.

Buckeyes I

Reviewed: Dec. 24, 2013
Delicious - just like Grandma used to make. Have to make them peanut free due to an allergy in the house - not as good as real PB, but fulfills my annual holiday buckeye craving. To make them safe for peanut allergy suffers - use sunflower seed butter (sunbutter brand is peanut free) instead of peanut butter and hershey meltable wafers (many chocolate chips/wafers are cross contaminated with peanuts but in my area hershey chips and wafers are safe - always double check labels as manufacturing varies by location). The wafers melt nicely in the microwave, reduce power and stir every minute or so until melted.

Pizza Dough I

Reviewed: Sep. 27, 2013
I have used this dough exactly as written and also taken time to dissolve the yeast, knead, rise, etc. I do prefer to take the time, but it comes out nicely either way. Parbaked the crust and loaded it with pierogi pizza toppings (brushed crust with olive oil, spread layer of mashed potatoes, topped with bacon and cheddar cheese (not as much cheese needed as a regular pizza). When done, drizzled with sour cream and sprinkled chives on top. Delicious!

this is my new waffle recipe - nice and light. doubled sugar and vanilla as recommended by others. made a double batch and froze the leftovers. Warmed the frozen ones in the oven and they were still nice and light, just like the fresh batch. thanks for a great recipe!

Chicken Noodle Casserole

Reviewed: Feb. 24, 2010
Very Good - enjoyed by adults and toddlers. Used sage in place of savory and added broccoli as well. I could see using a variety of veggies in this - whatever is in the fridge. Really enjoyed the sauce - sort of a cross between mac & cheese and chicken noodle soup. Used the eggless pasta recipe from this site for the noodles and made extra to freeze for a quick dinner. thanks for a great recipe!

Honey Baked Chicken II

Reviewed: Oct. 6, 2009
Very good - whole family enjoyed it, even the 1 & 3 year old. I used chicken breasts and 1/2ed the butter as suggested by others. Served with rice and steamed broccoli - will definitely do this one again. I made this again and added some carrots to the honey mixture and baked along with the chicken - made a nice sort of candied carrots
