Firecracker Grilled Alaska Salmon

My family LOVED this salmon. The marinade was sweet/spicy. I grilled it on the stove in a grill pan and had lots of sauce left over to heat and serve. Yummy over rice.

Spicy Baked Sweet Potato Fries

I was so hopeful that by trying some of the 'tips' others gave that I could get the crisp I wanted. Flavor was good but like many said, soggy. I'll try again though.

Layered Chicken and Black Bean Enchilada Casserole

Family loved this. I used jalapeno flour tortillas and pinto beans otherwise followed the recipe. Very yummy and flavorful. Also doubled recipe and layered 3 times so increased bake time.

Fiery Pork Skewers

Wow! the whole family loved this recipe. Like others I made 3x's as much marinade. When I skewered them I alternated (cut up) red/yellow/green bell peppers, red/white/yellow onions and I microwaved two russet potates till almost cooked through cut up and rotated them onto the skewers too. Husband used extra marinade to baste the whole skewer during grilling. So yummy..the family gave it 5 stars.

Easy Blender Salsa

family loved it. Took advice from others and added two crushed cloves of garlic and one tbl lemon juice with the lime. Easiest salsa ever!!!

Simply Traditional Lasagna

Fabulous lasagna. Took a little longer to prepare than my own recipe...but wow was it worth it. I doubled the recipe to make two separate casseroles...one with olives and one without. Big hit both ways. Thanks Sophie

Slow Cooker Chicken and Dumplings

WOW the whole family LOVED this comfort food. Here's where I changed the recipe; seasoned with pepper, celery seed, garlic, parsley. Added the bisquits 2 hours before it was done. The dumplings were swelling so much the crock pot lid started to come off. Simply replaced lid with foil tightly tented over pot. This enabled dumplings to do their thing and no lose of moisture. Unbelievably easy and a crowd pleaser. Thank you Janiece

Dad's Leftover Turkey Pot Pie

Dad your pie was amazing! I made them for our annual Thanksgiving Leftovers Feast the day after turkey day. Of the four families contributions mine was gobbled up first (ha ha). I left out the green beans though. Follwed everything else to a T.

Best Chocolate Chip Cookies

Amazing cookies. I don't think the family will ask for the traditional 'Toll House' anymore. I didn't have walnuts so I used chopped pecan. Other than that I didn't change a thing. Thanks Dora

Colleen's Slow Cooker Jambalaya

Amazing! Made exactly as posted. Didn't have Cajun seasoning, so made it up using a recipe on this site. I also used Zataran's jambalaya rice mix. Cooked it separately and served the Jamba over it. Yum yum yum

Pesto Pasta with Chicken

Super yum! All the guys loved it! I did triple the chicken, double the other ingredients but left pasta the same. Hungry family always wants more meat. Served with hot out the oven garlic bread and caesars salad. Thanks!
