Crab Salad

This was a tasty low fat dish. Next time I would omit the paprika or use less. Also, didn't use Old Bay because we were out. The sugar added a nice sweetness.

Eggplant Tomato Bake

Turkey Goulash

Nice and sweet tasting. I cooked the ground turkey with extra garlic. Added extra basil to the tomato mixture as well. Beware that the tomato mixture was more for flavor and wasn't really a sauce, so if you do want a saucy pasta you will need to add something more. Boyfriend enjoyed and so did I - would make again as is.

The Best Lemon Bars

Wow, these really were the best Lemon bars! We tripled the lemons and added a little less butter. Sprinkled with powdered to sugar. Everyone loved it!

Aunt Mary's Eggplant Balls

This was my first time making eggplant and it was success. I crossed my fingers that my boyfriend would like it, and what-do-u-know- he thought it was really good :) I rinsed with sea-salt to let the bitterness sweat out before adding to the garlic mix. Added extra bread crumbs and parm cheese. We ran out of fresh parsely so I substituted with some dried basil. I love herbs so I'm sure the full parsley amount would have been heavenly. I flipped the mini patties over 15 minutes through then sprinkled cheddar goat cheese on top the last few minutes in the oven, and served with tortellini. Great recipe, a keeper, thanks!

Stacey's Hamburger Seasoning

Good way to spice up a burger - it had a nice kick! We mixed the 5 servings for 1.40lbs of lean turkey, which made 4 burgers. We also added 1 egg to the mix because we didn't want the lean meat to be dry. Turned out moist and yummy. Sprinkled the last 3 servings on top of the burgers. Cooked on the grill to perfection. Would use again, thanks!

Zesty Slow Cooker Chicken Barbecue

Good, but was a bit too sweet. We used fresh chicken, hickory bbq sauce, white sugar because that is all we had, and skipped the worcestershire sauce because we were out. Used toasted buns and topped off with lettuce and tomato. **UPDATE** Left overs the next day weren't so sweet. I think the sauce evened out. Also, I used American cheese without the veggie topping and I enjoyed it much more. I now give this a 4 star instead of a 3 rating.

Tricolor Pasta Salad

Very good pasta salad. I loved the simplicity of it. We added tomato's, olives, parm cheese and used fat-free Italian dressing.The dressing soaked up rather quickly, so I added a couple tbs over our pasta salad the second day around. Would make again. Thankx :)

Potato Poofies

My boyfriend and I thought they were very good. Used a little milk after mashing and skipped the butter. Made more than expected. Make sure to leave plenty of room in the non stick skillet for flipping to avoid messing up the shape. Would make again.

Spanish Rice

We skipped the bell pepper and onion. Would have been very bland, if it weren't for the hot enchilada sauce we topped the rice with. Turned out good with our modifications. Served with chicken enchiladas (recipes from this site) and corn bread.

Chicken Enchiladas

I'd give this tasty recipe a 4.5 star rating. This does take some time to prepare, but have patience, it is well worth it. We used the cooked Rotisserie chicken from the grocery store. I'd use a little less cream of chicken and sour cream next time around. Taste really good smothered in extra enchilada sauce when out of the oven or for left overs. Made with Spanish rice (also topped with enchilada sauce) and corn bread on the side.
