Eggplant and Zucchini Casserole

Mexican Style Meatballs

Even better the next day. If I were to make again I would not use any pork and also add more peppers. I also baked the meatballs instead or frying for a healthier alternative.

Asian Orange Chicken

Orange Chicken at it's best!! Next time I'm skipping the marinating, using the deep fryer, and then coating in the sauce. Another way would be skip the pan fry and oven bake with just the sauce. Awesome recipe, thank you!

Pasta Carbonara I

I really wanted to like this recipe, but it was a no go for us. The sauce was barley enough for a full box of pasta. Also, once everything was combined the flavor wasn't there and the whole dish tasted bland. The only good part was the bacon. :(

Upside-Down Pizza

Good for my first upside down pizza! The crust was really good. I cooked it for 40 minutes and took out when the casserole was golden brown. This could possible be a 5 star recipe if you added more of your favorite toppings. Over all a good recipe, glad I tried it, thanks.

Chicken Pot Pie IX

I was suprised how good this turned out! A real comfort food that tasted better than all those frozen pot-pies I grew up on. Cheap ingredients and real easy to make. I used fresh chicken and 2 cups of frozen veggies which included: corn, peas, green beans, lima beans, and carrots. Thanks for a good recipe.

mmm very good. The whole family thought these were really great. Only suggestion was maybe throw in some herbs. Went great with mashed potatoes -- especially the left overs combined w/ the sauce!

Easy Garlic Chicken

This could be a 5 star recipe with a couple very simple modifications that don't totally change the original recipe that much. Bread crumb mixture is mushy and not crispy so I recommend cooking stove top. I sprinkled parsley, garlic salt, a cheese on top which added flavor to a semi bland sounding tasting recipe. I would try again.

Chicken Noodle Soup

A keeper! I used diced 1 lb celery, 1 onion and sauteed in 4 garlic cloves and 1/4 cup butter. I then added 1 lb of chopped carrots, 3 lbs trimmed and cubed chicken breast, 8 cups water, 2 cups chicken broth, 1 pack of bullion cubes, 2 tbs pepper, 2 tbs parsley, 2 bay leaves, and let simmer on the stove top of 3 hours. I used egg noodles and store them separate from the soup. FABULOUS!!

Spicy Burgers

Keeper Burger recipe for sure! Used 5/8 pasilla pepper instead of Poblano pepper as that was all we had at our Cali grocery store and it seemed so similar. Burgers were GREAT!! Although, he expected more spiciness.. I thought it was the perfect amount of hotness and spice combo however.

Delicious Ham and Potato Soup

Delicious Indeed! I made this recipe x5 and used the ham bone in the boil, doubled the pepper, and added chives. No need to change a thing, really it is great as is. Soup was "thinner" right off the stove, but thickened up tremendously the next day after refrigeration. The whole family enjoyed this one. Thank you!

Spicy Chicken Breasts

I used a little olive oil and then smothered the full amount of rub on 4 chicken breasts. I baked in the oven for 50 minutes at 400 degrees. Served with sweet corn and a garden salad. The spice was perfect.

Southern-Style Meat Sauce

Wow, this is the BEST meat sauce EVER! I replaced the tomato paste with a can of diced tomatoes w/juice. Simmered for 1 hour. I cannot wait to make this again!!! Many thanks!

Pumpkin Chocolate Chip Cookies III

Awesome. Everyone loves these pumpkin chocolate chip cookies. I doubled the recipe, cut the chocolate in half, and substituted the other 1/2 with crushed walnuts. Added a little nutmeg too.

Crazy Curly Broccoli Bake (Kid-Friendly)

Nothing gourmet about this recipe, however it was a good quick dinner fix. I added diced chicken and fresh carrots/broccoli. Parm cheese helps bring out the flavors.
