Vegetable Pasties

I used a can of condensed cream of mushroom soup in place of the olive oil, water and mushrooms. This was per my Grandma's recommendation. (just straight out of the can, I did not "prepare" the soup at all....) I used my grandma's pie crust recipe for the pastry, and they turned out great! Not too bad for my first ever pie crust or pastie experiment.... There is still about half of the filling mixture left over, so I think tommorrow I will try and make these again!

Cucumber Sandwiches III

Very YUMMY! I am eating these right now (and getting cream cheese on the keyboard!). Because I am a dill lover I went ahead and added 1 tsp of dried dill to the cream cheese mixture and a little pinch of dried dill on top of each cucumber as a garnish. Next time I make this (which will be soon) I will decrease the amount of the italian seasoning packet....it is just ever so slightly too salty. I will probably use 2/3 to 3/4 of the dressing packet.

Carrot-Sweet Potato Mash

I modified this recipe, I was trying to use up a can of sweet potatoes and a can of carrots. I'm sure it would have been even better with fresh veggies! I ommitted the brown sugar...canned sweet taters come packed in syrup...even though I drained that off... I used 2 cans sweet taters, 1 can diced carrots, 1/2 cup applesauce. didn't have any raisins. It was good and done in less than 10 mins. Still pretty good!
