Chicken Enchiladas I

Cube the raw chicken and sautee the peppers and onion with it. Add black beans, and serve with a flavored rice on the side. Also makes a VERY full 13x9 casserole dish. Would be worth halving the recipe in the future. Delicious!

Easy Mexican Casserole

White Cheese Chicken Lasagna

Pretty good white lasagna base. I would skip the chicken in the future - it doesn't add anything to the dish. Also the chicken broth taste is too strong - use veggie stock instead. This dish would also support other veggies really well (cooked broccoli, yellow squash, tomatoes, zucchini). Or make red sauce and meatballs on the side.

Slow Cooker Vegetarian Minestrone

Good! Requires the large crockpot. Could use some red pepper flakes for a bit more pizzaz. Would also be good with spicy Italian sausage (prob. wouldn't add pepper flakes in this case).

Tortilla Zucchini Casserole

Rob really liked it and said it tasted like mexican lasagna. In the future, I would ditch the eggs and add diced cooked chicken, black beans, and salsa. Can cook raw chicken right in the skillet with the veggies.

Picante Chicken Rice Burritos

Delicious! Kind of a lot of work though, so better to make parts of it ahead. I used minute rice but it didn't soak up all the broth. Use less chicken broth or add more rice. Can also add other veggies like pepper, corn, etc to the filling.

Makes quite a bit for the hand. Buy a large size glove to use all the liquid for a large upright hand, or fill a small or medium pair to have floating hands.
