Joey's Peanut Butter Cookies

Reviewed: Dec. 17, 2011
Wonderful basic recipe. 4 stars because of the changes needed. I doubled the salt, omitted the milk, and added 1/2 tsp baking soda. The batter wasn't too thin, like some people had problems with. I put the dough right onto the pan, didn't refrigerate. Just used my fingers to scoop it up and form into balls. The cookies were a bit crumbly when they were still warm right off the pan, but they firmed up when they cooled. Lovely flavor. Did the first batch last night and a double batch today. Sending them to my mother-in-law as a Christmas present. :)

Chocolate Cream Cheese Frosting

Reviewed: Jun. 29, 2010
O.M.G. This was great. I doubled it to use for a chocolate layer cake. It was incredibly dark and not too sweet. I did add another 1/3 cup of sugar to the doubled recipe just to make it a tad sweeter, though. I made a chocolate cake that was quite sweet and this frosting was exactly the thing to compliment it.

Nut Chocolate Balls

Reviewed: Apr. 29, 2010
These were awesome. A friend recently got on a gluten-free diet and the search brought these up. Who knew we'd find a recipe for basically Reese's Peanut Butter Cups. We will definitely make these again.

Jesse and Steve's Fresh Strawberry Cake

Reviewed: Apr. 29, 2010
I know I must have done something wrong. I'm just not sure what. The cake was so dense, it was absolutely ridiculous. I imagine I'll try this again using cake flour.

Silver White Cake

Reviewed: Apr. 17, 2010
This cake was fantastic. It was so easy! I only made a couple minor changes. Substituted half and half for the milk, added a couple teaspoons of strawberry flavoring and just a small bit of red food coloring to make it pink. It's fabulously light and fluffy. I had a few air holes so I know to get the egg whites stirred in a little better next time. This is my go-to white cake from now on!

Incredibly Cheesy Turkey Meatloaf

Reviewed: Feb. 2, 2010
This was very very good. I made some changes. I put in a 1/4 cup of chopped onions and 1/4 cup chopped green bell pepper. I didn't have seasoned bread crumbs so I got regular bread and put two tablespoons of chopped garlic, a couple teaspoons of Worcestershire, and a 1/4 cup water and mixed it all together. I also put some dijon mustard in with the ketchup for the top. I used the shredded cheese, but next time I will DEFINITELY use the cubes. The globs of cheesiness will just make it so much better. Since I used 3 lbs, I divided them into two pans. They still bubble up but not over. I will be making this again very soon.

Anna's Chocolate Chip Cookies

Reviewed: Jan. 30, 2010
I'm not sure about these cookies, to tell you the truth. The batter spread A LOT on the sheet and I think there might actually have been too many chocolate chips. I realize that might be blasphemy for some people, but the cookies had more chocolate chips than cookie. I will try these again with fewer chocolate chips. On a good note, my husband loves them. He LIKES eating almost straight chocolate. :)

Soft Oatmeal Cookies

Reviewed: Jan. 30, 2010
These were great. I did add a pinch more salt and some sprinkles of nutmeg, but they were definitely soft and definitely yummy. The batter makes soooo many cookies! I wrapped half in plastic wrap and stuck it in the fridge for later. I will definitely be making these again.

Butternut Squash and Turkey Chili

Reviewed: Nov. 13, 2009
I made this with the addition of the allspice and using tomato paste instead of tomato sauce. I used black beans instead of kidney beans and omitted the hominy. I loved it! My husband was not at all fond of the squash, though, so I took it out the next go around. Now he tells me he'll give me whatever I want if I make it for him! Maybe I can include the squash one time and just tell him to pick it out of his...
