Penne Pasta with Spinach and Bacon
Wonderful! This one is a keeper! Purposely got diced tomatoes with italian seasonings. Just chopped up the bacon (7 pieces) after it had cooled a little, but still sauted the garlic and then the tomatoes, juice and all, in the bacon grease. THEN added the chopped bacon and poured it over the pasta/spinach mixture. Be sure to drain your pasta water over the spinach (used a bag of baby spinach leaves) already placed in a colander. It wilts it perfectly. Topped each serving with some shredded parmesan cheese. A light but very tasty side....not a lot of ingredients and very easy and quick to prepare! NOTE: My box of pasta was 16 oz so make sure you use only the 12 ounces or the flavor might not be as it should be.

Bacon Wrapped Smokies
This recipe is the bomb! Also found on this site was a DIPPING SAUCE that makes the complete package! Mix 1/4 cup mayo, 1/4 cup BBQ sauce, and 2 tbsp. brown sugar until the sugar melts in. That's it....great stuff!

Super-Delicious Zuppa Toscana
So impressed!! I used the kale instead of spinach, diced the potatoes in @ 1/2 inch cubes, forgot and used Jimmy Dean pork sausage instead of italian (just added some italian spices). First time ever using was perfect in this, as the spinach would have been a bit slimy after it cooked, but the kale was great. This soup is wonderful to make the day before a dinner party...maybe even better the second day as there was no change in consistancy after heating again. Small kids might think it a bit spicy...but we think it is superb!!
