I'm Mexican, my DH is Puerto Rican so my cooking is heavily influenced with alot of tropical Caribé flavor

I recently made a 6 course cuban/puerto rican meal for over 40 guests and it was fabulous!
My cooking tragedies
I just can't get my homemade pie crust to come out looking beautiful like the grocery store bakeries, but it tastes WAAAAAY better than theirs.

Slow Cooker Beef Pot Roast
Excellant, awesome, the BEST! We all loved it. Thanks for this recipe, making it again for dinner tonight to share with another family. Can't wait for what I know will be awesomely delicious meat. This time I'll shred it into chunks and serve in pretzel buns.

Creamy Au Gratin Potatoes
Gosh i wanted to love this, it looked awesome when done, great texture but for some reason it was sweet. I thought maybe I used too mild of a cheddar but i went back to check and it was a 4 blend of cheddars, 3 sharps and 1 mild. Didn't alter recipe at all, I didn't use sweet onions and just used regular milk and even added extra cheese and yet the sauce was just too sweet. I was hoping to end my boxed au gratin potato days but perhaps not. I'm surprised at the overwhelming high reviews. Maybe it's our latin tastebuds that like spice/spicey, I think my Mom gaves me salsa in my baby bottle! But anyway, this was just not good and only 1 other person in family could finish their small serving of it, besides me since the guilt of so much left made me eat more than I cared to. Even then there was more than half still left over, and we're a family of 6! Sorry, i guess I'll keep searching later after the fear subsides.

Iced Pumpkin Cookies
THANK YOU FOR THIS AWESOMELY DELICIOUS RECIPE! have made this a few times and now and they're so yummy. The only thing I now do differently is make half of the glaze called for since the first time I had so much left over and our cookies were sufficiently drizzled covered and I don't want them too sweet as I want to taste the "cookie-cakes" as we call'm. Try it you won't be disappointed!
