Homemade Hamburger Buns

I've made these several times now...awesome! Let them rise to 3X...they will do it! Really light and "store bought like (albeit infinitely better)," which is not often a good thing but for a burger bun it sometimes is...sometimes you want a sturdy bun...sometimes this is perfect!

Fried Chicken Tenders

i did add some salt onion and garlic powder to the flour...these were awesome...try them! the dipping sauce is also very good. one other change i made was to dip in egg then flour then egg then breadcrumbs

Lemon/Raspberry Streusel Muffins

These are very nice and quick to come together (after a trip to the store for lemon yogurt). It is very easy to cut this in half to make six muffins which suits my family better...an no one likes stale muffins. I double the lemon zest and added the juice of a half lemon to my half batch. Instead of mixing the raspberries into the batter (things turn red real easy) I suggest filling the muffin cups one third full, top with berries, then top with remaining batter. I also opted for casting sugar on top in lieu of the streusel. We enjoyed them.

wonderful recipe...very easy to work with...rises like nobody's business...a half batch in a 9 by 13 pan yields a pan full of sandwich rolls or hamburger buns let alone dinner rolls

Chocolate Chip Cookies I

These are very good and the small batch is occasionally just what the Doctor ordered. I had these in a basket on my table for unexpected guests in less than an hour. I did not add nuts and I used a stick of butter for the shortening. I also upped the flour to 1 1/4 cups. Great cookies!

Zesty Porcupine Meatballs

I love these things. I grew up eating them once a month in the 70s. I had to precook regular rice also, as I do not have minute rice in the house. I believe you must use tomato soup, not tomato sauce. Mom always used Campbells' which was perfect with the Worcestershire (I used 2 T) and meatballs. I used homemade tomato soup i froze in august and it was very good. I did bake the meatballs as they looked pretty tender. even though i added 3 T of bread crumbs. A great dish with fried canned potatoes. A real ride down memory lane.

great basic recipe...my only alteration was a little course ground salt and pepper...loverly! an added plus is that it fit in the minibowl of my food processor...a big enough batch to use some basil but small enough that i had enough of everything in the house...i smeared some on some cod and baked it for dinner then froze the rest...thanks!

these are great...they are also nice if you divide the batter and make individual babies...i top mine with apples fried in butter withe brown sugar and lemon juice...i too substitute vanilla for the nutmeg

Almond Biscotti

OK these are awesome. I made two changes...I tripled the almonds and added 1/4 t almond extract to 1 t vanilla. They are quite delicate during the baking process...but are the best biscotti I think I've ever had when they are properly dried out. I drizzled a small amount of semisweet chocolate on the cookies after they were completely cool. You wont regret making these but they require a light touch during cutting.

Soft Onion Sandwich Rolls

I have made this several times now and the rolls are awesome. I make a half batch (4 rolls) formed round and baked in a 9 inch cake pan...the pan helps keep the rolls soft. I like poppy seeds on top.

Buttermilk Cinnamon Rolls

These are simple, amazingly fast and quite good. I made one-third of a recipe and I got a half dozen rolls. I substituted melted butter for the oil and added 1 T white sugar and 1/2 t vanilla to the dough. Flour amount was just right for me. I did use a little more butter and brown sugar in the filling than one-third of the recipe called for...I am glad I did.
