Crustless Cranberry Pie

Good but not great... missing something. Definitely try to find frozen strawberries and not dried. I added a tsp of cinnamon, which was good, but still did not drastically improve it. I think a streusel topping would help.

Pesto Polenta Lasagna

I changed this a lot. I made my own polenta. Then did layers of polenta, ricotta mixed with pesto, zucchini with onion and garlic, and ragu sauce. In the future, I would not salt my polenta heavily because combined with the pesto it was rather salty.

Pesto Pasta with Chicken

I used fresh pesto made from another recipe...I agree with cooking the chicken in the oil from the sundried tomatoes. Amazing! (I did not use pine nuts because they were so expensive in my store.)

This was amazing. I added lentils to mine though next time I will try canellini beans. I omitted the celery and only used 4 cups of vegetable broth. will definitely make again.
