Middle Eastern Rice with Black Beans and Chickpeas

5 stars because it was delicious and all my kids ate it up! I wanted didn't want to use meat, so I left out the turkey, but I am definitely making this again!

Chicken and Gnocchi Soup

Made exactly according to recipe and it was a hit, even with all that spinach. Beautiful to the eye and the palate. Had requests to make it again. It's easy enough that I probably will. Delicious!

Spiced Quinoa

5 stars because nearly everyone in my family ate this healthy, meat-free dish without complaint. I liked it a lot. The quinoa took longer to cook than I thought it would but the longer cook time seemed to take away some of the bitter flavor I find in quinoa. I am new to cooking with quinoa although I have eaten it cooked by other people. No pine nuts in the house, and I almost left out the raisins, but the other reviews persuaded me to use them. It was a nice balance of flavors. Eaten by kids ages 12-17. Healthy, truly kid-friendly food is key for me. If the kids won't eat it, I don't want to make it. I will definitely make this again.

Butter Snow Flakes

SO much better than the recipe that came with my cookie press. They are still yummy the next day and maybe even better. I have been looking for a recipe that would produce cookies that tasted like the ones a former neighbor gave us. I followed this recipe to the letter. It makes a very flavorful cookie but the flavors are not overpowering, just delicious! Not your plain butter cookie!

Syracuse Salt Potatoes

The best potatoes I have ever had! Quick, creamy and dangerously delicious! If you are trying to stick to a low carb diet, do not...DO NOT try these potatoes. You will be hooked!

Mint Chicken

So good and different than the usual. I am blessed with a large patch of mint so it was fun to have a main dish that used a good bit of mint. The mint was not overpowering though I think I may have over done the lemon juice. Still, everyone from age 7 to 43 snarfed this down! We served it with brown rice and stirfried baby bok choy and snap peas. It was a beautiful presentation.

Slow-Cooker Chicken Tortilla Soup

We all loved this, even the kids (ages 6,9,14). I crushed tortilla chips into my bowl because I was not up to making them from scratch. Maybe next time. There will definitely be a next time! I used green enchilada sauce because we love it but next time I will try the red sauce and see if we still like this soup.

Vanilla Crepes

I used a little less than 1/4 c batter for my 7" pan. We had them with strawberry sauce and nutella and I also made blueberry sauce which was delicious. I would make these again because the family liked them, but I just didn't like the taste as well as my other recipe.

Shrimp Scampi ala Norelllaura

This smells fabulous and tasted so great. I didn't have a red pepper so I used two large Roma tomatoes. The shrimp soaks up the garlic and red pepper and even my 6 year old ate several. The sauce was a little thicker than regular scampi and we loved that! My husband: "I would eat this again!" That's high praise! It didn't take as long as the time estimates given, but I had help peeling the shrimp. I started the oil and garlic in the pan and then started the pasta and by the time the pasta was done, I was removing the shrimp from the pan so I could crank up the heat to thicken it faster. It was done and on the table in about 30 minutes.
