About this Cook
I am an absolute foodie. I love going out to eat and trying new places, but most of all I love to make food at home for my fiance and I. We just bought a house with a huge kitchen and have definitely been putting it to use. We cook a lot together and are constantly searching for new things to make or new methods to make old recipes better.
My favorite things to cook
I love comfort foods but I also love leafy greens and vegetables so I try to make a balance of both. Pot Roast, potatoes, stir fry, pork tenderloin, tacos, lasagna, salads, steak, chicken and more. I am in love with my crock pot and am always on the hunt for great new recipes for a great meal at the end of a busy day. I also love to bake cheesecakes, chocolate chip peanut butter cookies, brownies, and pies.
My favorite family cooking traditions
My mother is Costa Rican so I grew up on a lot of Gallo Pinto, Patacones, and Platanos Maduros. I love Mexican/Costa Rican food however I don't like things super spicy. Anything with Cilantro, tomatoes, guacamole and beans I will eat. My dad makes everything with onions and herbs so I love adding those to recipes as well. I am not a picky eater and am willing to try anything once.
My cooking tragedies
I can't cook rice for the life of me. Have tried it dozens of times and it never turns out right. Breakfast is also a hit or miss thing with me as well. Pancakes, scrambled eggs, and hash easy as they are to make, I don't know why I am so terrible at making them. I could use some major help in that area.

Super Orange Chicken
This recipe was OUTSTANDING. Five stars definitely. The orange flavor really stood out and contrary to other reviews, I did not think it was incredibly salty. I actually thought it was perfect the way it was. After baking it uncovered, I did throw it on the grill to get some charred marks on it. I made it alongside some green beans lightly tossed in lemon juice, salt and pepper and rice with Cilantro. YUM!

Grilled Mediterranean Vegetable Sandwich
This was a very good sandwich, but I did modify it a bit to fit my taste. I love vegetables so I added purple onion and zucchini. I also added a slice of fontina cheese and instead of mayonnaise, I used a garlic and chive cream cheese. It was delicious!

Monkey Bread I
This recipe was wonderful and DELICIOUS! I omitted the chopped walnuts and raisins and it tasted like a gooey carmel roll that pulled apart. My fiance loved it and wanted more. Awesome recipe!
