Chocolate Chocolate Chip Cookies I

Reviewed: Jan. 26, 2011
I thought these seemed too simple, but they were really, really good. And easy, which is great!

Pumpkin Brownies

Everyone really liked these. The flavor combo was very interesting, though I wasn't quite as keen on them. They were a great texture and a different fall treat to enjoy.

The Best Rolled Sugar Cookies

Reviewed: Dec. 21, 2010
Great basic sugar cookie recipe. I followed another reviewer's suggestion and used powdered sugar to roll them out, which made them quite tasty but a little bit crunchier than I like. Then made them without doing that. Both were good. Easy and tasty recipe

Shepherd's Pie VI

Added some thyme and some garlic with the meat mixture to give it a bit more flavor. Makes a great base recipe that can be adapted.

Honey-Garlic Glazed Meatballs

Reviewed: Dec. 15, 2010
Everyone loved these! I didn't have access to ground beef, so I used half ground pork and half ground buffalo (we're overseas). I also got a little lazy and used garlic powder instead of fresh garlic. I'm sure fresh would make it even better, but it all worked.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 20, 2010
Really great recipe. I did as some others suggested and used butter for half of the oil and used brown sugar for 1/3 of the sugar. Really yummy.

Irish Soda Bread

Reviewed: Oct. 27, 2010
I had never made Irish soda bread before. This was a really good recipe for it. It is a smidge dry, but I think that is partly the nature of soda bread. Really fun St. Patty's Day treat covered in some butter along with a good Irish dish!

Irish Lamb Stew

Reviewed: Oct. 27, 2010
This was really great. I made it for Easter dinner last year. It takes some time, but I did cook it in the slow cooker, which made it nice for the actual cooking time and did give it a nice long time for flavors to blend well.

Banana Pudding IV

Reviewed: Oct. 27, 2010
Very good recipe! Banana pudding is pretty nostalgic for me, and this is a really great recipe for it! My brother is diabetic, and I've also made a diabetic version using some sugar-free shortbread cookies (closest cookie I could find), sugar-free pudding, sugar-free whipped cream, and a diabetic substitute for sweetened condensed milk that I found online. It turned out delicious as well.

Sour Cream Coffee Cake III

Reviewed: Oct. 27, 2010
This is really good. I had to use plain yogurt instead of sour cream because that's what I had available, and it worked well. It's pretty rich and sweet, so it is a bit much for just a slice for breakfast or something, but it is a perfect pairing with a cup of tea or coffee.

Grandmother's Buttermilk Cornbread

Reviewed: Oct. 27, 2010
I always use this recipe now for making cornbread! I often substitue plain yogurt (Greek/European style is ideal for texture) for the buttermilk just because I am more likely to have that on hand. A friend had made this, and I asked her for the recipe, and it's gotten a lot of compliments in the many times I've made it. She also tossed in a can of corn to the mixed batter, and that was a nice touch. I've added some honey or some grated cheese at times for a nice touch, and you could be creative with some fun add-ins to this great base, but it's also completely delicious and wonderful just as it is!

Really nice to have a substitue to buying the packaged stuff that adds the same great flavor.

Peanut Butter Bars I

Reviewed: Oct. 26, 2010
So delicious and quite easy! Didn't have access to graham crackers so used some basic tea biscuits, and they were fine. Very yummy and a big hit with those I made it for.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 26, 2010
Loved this sauce! I also did not flour the chicken breasts ahead of time, as others mentioned and then just added some flour before adding the liquids, and it worked well and was much easier. The chicken was not particularly tender, so I might take others' suggestions of pounding it flatter first to better soak in the sauce, but still, it was absolutely delicious!!!

Banana Sour Cream Bread

Reviewed: Aug. 3, 2010
Absolutely delicious. The sour cream adds a little something to keep it from the average boring banana bread. Got lots of compliments on it! I actually had made it several times now, including one time with Splenda once instead of the sugar, since my brother is diabetic, and he loved it!
