Easy Gravy

I didn't have miso, so I added about 1/2 - 1 t. of corn starch. I had to do this 2 times: it's very important to SLOWLY add the broth and stir constantly so as to maintain thickness. Up to this point, it was a 3 for me because I found it a little bland or lacking depth, so at the end, I added about 1/2t. poultry seasoning and it was a 5-star! Everyone loved it, and it will be my gravy standard from now on!

Zucchini Brownies

I followed the directions as written (using the large grater size for the zucchini). Even after adding the zucchini to the dry-looking sugar-flower mix, it was still crumbly and definitely not a batter. After reading other reviews, I grated about 3/4 zucchini on the small grater size, added it in. It was a rather thick "batter-ish" consistency, but turned out yummy! I found the result a perfect cross between a dense, more gooey brownie and cake. Perfect!

Mouse's Macaroni and Cheese

Holy cow! this is an amazing recipe. Best mac and cheese I've ever had (including my mom's, my own, and restaurants). I felt like a rock start sharing this with others!! Quick and easy, I'll make this over and over!

Sugar Free Cake

Made this for diabetic's birthday and everyone was commenting on how good it was. I didn't use raisins and topped it with "Sugar-Free Frosting" by "Chelsey." Nice and moist. I used a 9" round pan and that was all the batter would make. I'd double it for a 2-layer cake next time for sure.

Sugar-Free Frosting

YUMMM! Made this for diabetic person and while it's different than your typical frosting (exactly what you imagine pudding & whipped cream being like), it's delicious. I made homemade whip cream because I feared the store-bought combined with the pudding would make it too sweet. I used about 1/8 c. splenda in my whipped cream and it was great!

This was fine. Easy to make. I made as-described and felt it was little flat. Salt would help, but it was still fairly dull. I might make again for just me and my husband, but not for company.

Zucchini Cobbler

I've made this twice and everyone has raved about it. Both times, I misread the recipe and used only 1/2 cup of butter in the crust (instead of 1 and 1/2 cups!). The crust on the bottom of the pan was perfect. The top was golden but dry and crumbly. However, everyone thus far has thought that's the way it's supposed to be on top... with ice cream it's great. So, if you wanna decrease the butter, that's a perfect option!

Easy Lemon-Blueberry Jam

Using the lemon jello made this much less intimidating for my first try at jam. This jam was far better weeks after I made it than right at the beginning, as the blueberry flavor seemed to come out more while the citrus-y lemon flavor seemed to recede some. As-is, it was a bit too sweet for me, so I may back off the sugar some next time.

Zucchini Herb Casserole

This is my second time making this (the first time I made it as directed and gave it a 3 stars). This time, I added a bit more paprika and salt&pepper, as well as more cheese. Servings are on the small side, but serve the casserole over a bed of rice and it's perfect!
