Roasted Brussels Sprouts

Reviewed: Nov. 10, 2013
WOW! What a simple yet delicious way to prepare Brussels sprouts. I will FOREVER prepare them this way. I did make a few alterations: washed, trimmed and halved sprouts AND used home grown broccoli then sprinkled 1 tsp of sea salt over both and let sit for approx. 10 mins. Then placed in a large bowl and put in olive oil, ground pepper, and minced garlic- about 3 cloves. Put on a foil-lined pan and baked for approx. 25-30 mins. Sooooo..... good!!!

Such an awesome recipe. The kids ate them as fast as I could make them. They even asked to eat the filling without the chocolate coating.

Gluten Free Red Velvet Cake

Reviewed: Jan. 1, 2012
You have restored my faith in gluten free desserts. I can now comfortably say delicious and gluten-free in the same sentence. I replaced the buttermilk with coconut milk and they still turned out FANTASTIC!

Coconut Bread Pudding

Reviewed: Jun. 27, 2011
AWESOME! Just made this last night and the WHOLE family thought it was great. Thanks for sharing. I was able to buy a whole coconut from my local grocery store. My husband poked a few holes in the top, drained the "milk" inside, then just cracked it open. After it's been open I just used a butter knife to pry out the white "meat", and then shredded it. This is a keeper! : )

Rib Eye Steaks with a Soy and Ginger Marinade

Reviewed: Jun. 26, 2011
WOW! Totally YUMMY! This is an easy, wonderful, recipe for anytime. I used mine to marinate my beef in for a spicy beef stir-fry. I did however had to sub a few ingredients because I didn't have them on hand. I used honey in place of maple syrup, olive oil in place of sesame oil and then added in a tsp. of toasted sesame seeds. Just a REALLY GREAT recipe! Thanks for sharing. : )

Rosemary Au Gratin Potatoes

Reviewed: May 19, 2011
WOW WOW WOW WOW. These are quite possibly THE BEST au gratin potatoes EVER! Assembled in lasagna fashion: sauce, potatoes, cheese, etc. It takes a little bit longer to cook than thought, but it might be my oven. You will not be disappointed!

Spiced Farmhouse Fairy Cakes

Reviewed: Mar. 17, 2011
Great little cakes! I had to make some adjustments because of the flour, I have to have gluten free. I was a little worried, but the cakes turned out perfect. It seems like there needed to be more spice-ing up to these so I did double the cinnamon, put in 1/4 tsp of ginger AND nutmeg and just a dash of allspice. I also added 1/2 tsp of vanilla. Since I didn't have self-rising flour I added 1 1/2 tsp of baking powder and 1/4 tsp of salt to make up the difference. Information on the icing would have been nice, or at least a link to the one used. And one last thing, cardamom should NOT be optional! And there should be more than just a pinch. Thanks for sharing. : )

Salmon with Lemon and Dill

Reviewed: Dec. 14, 2010
This is an AWESOME "marinade" for any kind of fish. I was looking for a recipe for some yummy cod I picked up. Was tired of the cheesy, drenched in cream, or bread crumb coated recipes. I happened upon this FRESH, DELICIOUS recipe and was so very happy! LOVE IT! Thanks for sharing. Alternate: sub olive oil for butter, used 1 tsp minced garlic with lemon juice and oil, used FRESH dill weed.

Thick Chocolate Pudding

Great pudding. Easy recipe. Mine turned out a little too thick, not sure what I did wrong. Maybe too much cornstarch? But the flavor was better than anything else. Thanks for sharing.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Reviewed: Feb. 22, 2010
This is simply THE BEST I have tasted, even better than the restaurant. Made EXACTLY as stated in recipe- although I subbed tapioca starch with corn starch, worked fine. Make sure to cool rice with coconut sauce in the refrigerator. This cools each them down sufficiently and allows the rice to soak up the extra moisture. Make the second sauce right before serving as this sauce thickens rapidly and tastes better when warm. My kids LOVED this and called it a kind of natural way to make rice krispies! You will be amazed!!!

Creamy Carrot Soup

Reviewed: Aug. 12, 2009
Thanks for such a great recipe!!! Now I know 2 recipes I can use my plethora of carrots in!! Ha ha I did however change a few things: sub olive oil for butter, 2% milk for heavy cream, took out rosemary, sauteed minced garlic w/ the onion, used roasted pork tenderloin- cubed, 1 c. finely shredded cheddar cheese, 1 tsp coriander, and 1 cup water. I added the pork, cheese, coriander, and water after I pureed the carrots, potatoes, onion & garlic. I also used the milk as a buffer in the pureeing process. Otherwise it was really difficult to get the soup blended in the blender. My doubtful husband was even pleasantly surprised of the great flavor this soup had! That is a HUGE compliment coming from him!

Sam's Famous Carrot Cake

Reviewed: Aug. 10, 2009
This was my first carrot cake and I seemed to have picked the perfect recipe. Thank you so much for sharing this great gem. Carrot cake struck me when I planted carrots in my garden earlier this year. I had just harvested my first bushel of carrots and didn't know what to do with them until I came here to All Recipes. Garden fresh carrots, how else would you use them?? DUH! Thanks for making my first a great success! (i.e. I substituted craisins for the raisins because I like them better. The recipe worked out wonderfully.)

Banana Bran Muffins

Reviewed: Aug. 2, 2009
Made this recipe as is, EXCEPT I didn't have oat bran but I did have wheat germ. I was afraid the recipe would be too dry, so I might have added a bit more bananas- it's so difficult to get an accurate reading when measuring mashed bananas anyway. However, they turned out fabulous. I took the advice of storing the remaining in the freezer. It's a great breakfast in the morning since it's been so hot. Thanks for a great recipe! My family loves it too!
