Apricot Bars II

The quantities for the crust are hugely in error. I should have decreased the amounts by at least half for the crust and doubled the apricot filling portion. They also need more flavor, perhaps some cinnamon and/or nutmeg and/or vanilla. Since I didn't do any of the above, the results were awful. I ended up with a pan full of oatmeal bricks! They were so dense and unapetizing, we ened up throwing them away, which is something we rarely do in our home!

Brown Sugar Meatloaf

Very tasty! I made a few variations. I used crushed Cheese Nips and about 1 tablespoon of the "fresh" ginger that comes in the little bottles. I also added two cloves of garlic because we just can't eat any sort of meat at my house without garlic! It was so flavorful and moist. This recipe is definitely a keeper!

Orange Cream Fruit Salad

I thought this was a delicious salad! I used fresh pineapple and fresh peaches - rather than the canned as specified in the recipe. It was a bit runny and I wanted it to hold together a little better so I added toasted coconut and toasted pecan bits. My guests called it "food of the gods!"

Gina's Pound Cake

This was a very easy cake to make. It just took a little time beating in all 6 eggs on at a time, and also the cooking time and cooling time are long, so it's not real quick cake. I made it as a birthday cake that was served with ice cream and the toppings. It was way too rich to be served along side huge scope of ice cream with caramel and hot fudge and all the fixings. It is wonderfully favorful and very, very rich. When I make it again I will serve it with tea or coffee and with nothing served along side it except maybe some fresh, unsweetened berries. Thanks for the recipe!
