Boilermaker Tailgate Chili

Great base recipe for the spices. Made it today using NY steak which was on sale and chorizo sausage in place of the chuck and italian sausage. Omitted the beans and bell peppers as well. The result was a very tasty chili rivaling any I've tasted at chili cookoffs. Perfect heat. Great on rice or spaghetti too!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Easy and delicious!!! Pork chops and some shriveling grape tomatoes in the fridge led me to this fantastic recipe! Followed the recipe exactly and I felt like I was dining in a gourmet restaurant. The balsamic and feta pair beautifully with the pork, onion and tomatoes. This is a keeper.

Sopapilla Cheesecake Pie

O to the M to the G!!! This recipe leaves nothing to be desired. Prepare it exactly as listed, watch it in the oven, and you cannot go wrong! If using a metal pan either cut a few minutes off the cooking time or lower the temp to 325 degrees. This was the star at our Thanksgiving dinner!

Shredded Brussels Sprouts

Absolutely delish, the only thing on the Thanksgiving table that had no leftovers. I quartered the brussel sprouts as others suggested, added about 1-2 tbs. balsamic vinegar while cooking on the stovetop and then finished off in the oven for about 10 minutes for a wonderful nutty flavor. This will be our go-to holiday recipe.

Black Bean, Corn, and Tomato Salad with Feta Cheese

This was delicious along side Jay's Jerk Chicken. I could not find jicama in my market so subsituted 1 japanese cucumber diced. Instead of using fresh corn, sweet frozen corn was much less work. Like others, I reduced the oil in the dressing to about 1/4 cup and added a few splashes of blood orange balsamic vinegar. It tasted great right away, but even better marinated overnight as instructed. This is a great side to any grilled meat dish!

'Out of Salad Dressing' Salad Dressing

One of the best homemade salad dressings ever! Tastes like a very mild Caesar and consists of ingredients that are readily on hand. Will make this even if there is store-bought dressing in the fridge.

Taqueria Style Tacos - Carne Asada

Bueno! I made this for my very finicky fiancee and he loved it; said it was the best thing I've ever made. I made the recipe for 8 servings and followed the measurements exactly combining all of the marinade ingredients in the blender; added a bit of cilantro since I had it on hand for the other salsa. The cilantro gives it a wonderful taste and it was a way to make my fiancee eat something green! Put it in the crockpot for about 5 hours and then grilled the meat before slicing and putting it back in the crockpot with sauce to become insanely tender meat for tacos and burritos. Made the cilantro/onion salsa and the roasted tomato salsa, both were phenomenal! I can't wait to have a taco party for my family.
