Chicken Milano

The flavor and richness was fabulous! I even tried to lighten it up a little by using half and half and light butter...didn't matter! Still tasted great! Only thing...be ready to hustle on this recipe. There's a ton of moving pieces and they all require attention at the same time. Get everything prepped beforehand and then just move! Totally worth the sweat and extra dishes :)

Slow-Cooker Chicken Tortilla Soup

This was so good and so full of flavor! I will def be making again for a cold winter's night. Like many others, I used only chicken broth and added in a can of black beans...delish! My only complaint (and more of a preference) is the whole tomatoes - I didn't care for them much. Next time I will use diced tomatoes or Rotel. Thank you for a great recipe!

Blackened Tuna

Maybe I did something wrong, but this didn't turn out anything like I thought it would. For one thing, it was rubbery hard. I cooked it exactly as stated above, but only for 2 minutes on each side. The flavor was good, but not melt in your mouth like my other tuna recipes.

Quick and Easy Mexican Chicken

This is hands down my favorite dinner to date! I add jalapeño slices to the top before I pop it into the oven and top it off with a dollop of fat free sour cream before I set it on the table. Sooooo good :)

Garlic Spinach

This was so good! I typically use balsamic vinegar with my spinach but the lemon juice was a nice, refreshing change. It paired perfectly with my seared ahi tuna :)

Honey Roasted Red Potatoes

This was very good! However, I barely got to enjoy this recipe because my husband kept eating them off my plate when I wasn't looking!! Like many others, I doubled the sauce and added a little garlic salt half way through. I also used dried minced onion because I was out of fresh onion...it was still amazing! This recipe took exactly 40 minutes in my oven at 375. This is a keeper :)

Baked Salmon Fillets Dijon

I made this tonight for dinner. Soooooo gooooood! I ranked it a 4 because I did make some small changes to the original recipe. I mixed in minced garlic into the mustard and sprinkled some dill on top like a few of the other reviewers. I also put it in the broiler for about a minute to crisp the bread crumbs. I will absolutely make again! Maybe try it with a little honey? I made with an asparagus recipe from this site and a bag of rice pilaf. Husband ate it all :)
