Jambalaya Casserole

I just got back from the store..wasn't even planning on buying Browning sauce because I didn't know what it was..BUT I happened to glance over in the baking aisle and there it was. It was underneath the McCormic Display that has all the premixed spices (meatloaf, taco season, etc). I was at Giant Eagle if that helps anyone. It is a little yellow bottle. Hope that helps for anyone who may want to use it. I love this recipe! I will say that as a family that likes things spicy, it does lack a little bit..Easily fixed with a few jalapenos and some red pepper :) Great flavor! Obviously, this makes a TON of food...

Mexican Rice III

This is the star of the meal! Great great recipe. This with home made enchiladas, and of course a margarita, will kill any craving to go out to eat!

Cottage Cheese Chicken Enchiladas

These are VERY VERY good! I made this with refried beans, and the Mexican rice III and it was a great dinner all around. The only thing I will change, is next time I will add about a 1/4 of another can of enchilada sauce. I like very saucy enchiladas though. and a tip with boiling the chicken..I boil mine in Chicken broth with some pepper, cumin and turmeric. I then reserve the chicken broth and use it for the mexican rice :)

Easy Pie Crust

This crust was great! I was very skeptical of this one because it just sounded too good to be true. I was in a time crunch on Thansgiving baking, so I used this recipe in a hurry. It was great! I did add some extra sugar however, as i was using this for a dessert. The crust was very flaky. You could tell that it was different than normal, but it was very good. I received many compliments on the crust. Will use again and again.

Homemade Pan Rolls

My mom couldn't believe I made these. They were so yummy. I made them for Thanksgiving. I cooked them before I put the turkey in the oven in the morning, and then I popped them back in the oven while I was letting my turkey rest. That way everyone had nice warm rolls. Excellent recipe! These are my personal notes: Dissolve the sugar into the warm water, then add yeast. Let it sit for 10mins. Then add milk (replace the water with milk), oil, and beaten egg. Then add listed amount of flour, and salt. Add the remaining flour if required. Also, when baking- be really careful of the baking time

Cocktail Meatballs I

These are really yummy. I used Tabascos Chili starter sauce. I served these at our family Christmas Eve party, and my brother in law was running around saying that I had made " a good a spicy meat a ball" lol.

Amazingly Good Eggnog

This stuff is SOOO GOOD! I have never had homemade eggnog before *because I didn't think I would like it due to the fact that I can't stand store bought* but it was extremely good with some spiced captain morgans rum. My husband who loves most eggnog, absolutely LOVED it. He started drinking it on Christmas morning, and by dinner it was gone! I had 2 small cups, and hubby had the rest.

Make-Ahead Turkey Gravy

This is SOOO good! I did not have wings, so I used 3 drumsticks and about 1.5lbs of chicken hearts/gizzards. It didn't give me as much gravy as I was hoping for, but this was so good, I will make more. I also added a few TBLSP of fresh parsley. I think it gives the gravy a nicer look. I also made a roux and did it that way. this was my first real attempt at a gravy, and it turned out wonderful. This is definately going to be my go to recipe. To make a roux: use some fat (I didn't have much, so I used the 2 TBSP of butter in the pan as well) and warm it up. Then continue adding a little bit of a flour at a time, until all 3/4 cup of flour is gone. I also had to add some broth the more flour I added. The roux is a thick consistancy and then I added it slowly in to my other pan over medium heat and stirred very frequently for about 5 minutes. Update: I had frozen the gravy in a ziplock container. I put it in the fridge the night before Thanksgiving. In the morning after I got my turkey in the oven I took the gravy out and put it in the crock pot. Put it on low for a few hours, then an hour and 1/2 before dinner was served I put it on high, and just asked anyone who walked by the crockpot to stir it. It came out PERFECT. It was creamy, not thin, and there weren't any lumps. It made the final part of Thanksgiving much less stressful. I actually remembered the rolls early on and didn't burn them because I wasn't fussing over the gravy.

Spicy Pumpkin Fudge

I have tried both the original verison and one with alterations. I liked the original, however, if you want the pumpkin to come through you need to use the advice of other users (as I did) and instead of butterscotch, use 1c. white chips, and 1c. cinnamon chips. Also up the pumpkin to 1c. and only use 1/2 the amt. of butter. I do favor the the recipe with the alterations more.

Golden Yam Brownies

This is a great recipe. However, I am dissappointed because I was expecting a rich brownie. This is not a rich brownie. It is a cake. I followed the recipe to a T. If the name was changed, I would give it a 5 star. I told my guests, I was making brownies, and I have cake instead. Oh, I did make this recipe twice, as some of my co workers were intrigued as to what I was making. The second batch, I put a heavy sprinkling of pecans on top, and it really made these over the top.

Apple Bread

Yum!!! This bread is soooo good. I have made some healthier alterations that I use when I am making this for my family and they work out very nicely. I sub all the oil for apple sauce. *This does make the bread not rise quite as much, but the flavor is still great.* I also cut down on the sugar by 1/4c. as well. Other users have suggested adding in 1/4 cup of Orange Juice, and that does work nicely. When I bake for my family, I try to keep it as healthy as possible, as a lot of us are trying to watch our weight. The original recipe is wonderful as well though and I use that one for special occasions. (The only alteration I made when following the recipe is adding in the 1/4c. of orange juice.)

Garlic Cheese Quick Bread

This bread was ok after some alterations. The first time I made it, it was quite bland. NOTE: This is definately more like a bisquit than a bread. After making alterations, I would make this a 4star recipe. I will still keep looking for a better recipe I think. I added 2 cloves of fresh minced garlic, about 2 tsp. of fresh minced onion, and upped the cheese by about 1/2c. As other cooks have recommended, this is a bread that you should make a night in advance. This is not something you want to eat warm even though it smells really tempting.

Country White Bread

This is my new go to recipe for white bread! I gave my grandmother a loaf of this bread, and when she tried it she said it was just like the bread her grandmother used to make. Only thing I did different was I halved the sugar as that seemed like an awful lot for bread. Glad I did as you can still taste the sugar. But overall this bread is perfect for an everyday bread.

Extreme Banana Nut Bread 'EBNB'

This is the best recipe!! I have never made banana bread, and I tried this recipe, because I am going to be making a variety of bread to give out as christmas gifts this year. This is definately a keeper!! The only thing I did differently is added a tsp. of Baking Powder. Turned out great! This bread was super moist, and I gave a loaf to my mom. 4 days later, she had a piece left which I ate and it was still just as moist as the day I made it. Definately worth making. Health warning is right though...it is hazardous at home and don't eat the batter!! LoL. It is hard to control yourself.
