Cream of Fresh Asparagus Soup II

Excellent! Perfect soup for Ash Wednesday when asparagus is on sale. And using my immersion blender makes it so easy.

Cheesy Scalloped Potatoes with Ham

I was looking for a recipe to use leftover ham. This caught my eye and with all ingredients on hand, except for peas it was worth a try. Delicious. I did substitute almond milk for regular milk. My husband loved them and is looking forward to leftovers tomorrow - he says Scalloped Potatoes are always better the next day.

Chilaquiles II

I appreciated the recipe. I ended up doing a little tweaking of my own based on other reviews. I sprayed with butter flavored spray three whole wheat flour tortillas (that's what I had on hand)and baked them in oven until crispy. Sprayed a pan and cooked a whole chopped onion until soft and golden. Then added the eggs and the tortillas cut in strips. Next was some enchilada sauce I had left over and some salsa with it. When eggs were mostly finished, I added chopped leftover cooked chicken breasts and the shredded cheese over the top and covered to finish cooking. Delicious.

Authentic Mexican Breakfast Tacos

It was a hit at our home this morning for breakfast! Yum! I did saute some onions and mushrooms as suggested. I also had a leftover twice baked potato which I cutup and added to onions and mushrooms before adding the egg mixture! Delicious served with some salsa and sour cream! Next time I'll make sure I have some avocado to add.

Almond Cookies I

My husband and I loved these cookies. I used 1 1/4 cup whole wheat pastry flour and 3/4 cup ground almonds and 3 Tbsp of Chocolate Amaretto Liqueur (that's what I had). And as others suggested I rolled dough into balls sprinkled tops with a bit of sugar and pressed with a fork.

Roasted Cauliflower Soup

A couple of minor changes, roasted a head of garlic with the cauliflower. Sauteed the onion in canola oil rather than butter. I didn't have any sherry so I added a bit of white wine (Riesling) instead. Delicious, the whole family enjoyed it. *********************************************************************** I made this again last night. This time I roasted half of a large red pepper (cut in strips) with the cauliflower and 3 heads of garlic. I thought adding the red pepper would give a little bit of flavor but more importantly a little more color so the finished soup did not look like oatmeal as other readers complained. It was also delicious!

Butternut Squash Soup

We loved it! I I roasted the squash first along with a couple of whole garlic heads. (Cut the squash and scooped out seeds, cut the garlic in half then brushed olive oil across tops of squash and garlic, sprinkled a bit of salt and pepper, put cut side down in a pan and baked at 350 degrees for about 45 minutes). The roasting of garlic and squash was from a different recipe. I had them roasting when I found this recipe. I only used one 8 oz package of reduced fat cream cheese. I added a little bit of non fat sour cream when serving and then enjoyed! Oh so good! Husband loved it too!

Apple, Cranberry, and Pear Crisp

Delicious. I used all pears since we have an abundance of pears from our tree. Since they were ripe and sweet, I skipped the honey and used about half the brown sugar. I also used only 1/4 stick of butter. We all enjoyed this with some ice cream! Yum!

Buttermilk Oatmeal Muffins

I adjusted a bit to make them a bit more healthy and they were still delicious. Substituted whole wheat pastry flour. Used dry buttermilk and added water, used 1/4 cup brown sugar, 1/4 cup applesauce instead of vegetable oil, and added 2 Tbsp flaxseed.

Spinach Lentil Soup

Super easy, delicious and nutritious! Perfect for a rainy Sunday afternoon. I served with cornbread and it was wonderful. I followed directions exactly (except I had extra cup of dried lentils so I tossed them in too. Next time I'll experiment with adding other vegetables as suggested by others. Soup was great as written.

Black Friday Pie

My husband and I really enjoyed this recipe. We had no green beans or green bean casserole left over. Instead I used leftover roasted vegetables and also leftover sliced cooked carrots. I followed other suggestions and reversed the potatoes and stuffing positions. I also put cranberry sauce on half the pie, as suggested. I liked the cranberry but my husband did not. Finally I sprinkled some shredded cheddar cheese on top. Delicious way to serve leftovers without a lot of different dishes.

Robin's Quinoa with Mushrooms and Spinach

I have been wanting to try quinoa. I bought some at the store and then I couldn't remember what recipe I had planned to use. I discovered this one and made it tonight. After the funny look and the "What is it?" question, my husband tried it and liked it! We both really liked it and I will be making it often.

Cauliflower Casserole

My husband and I loved it. A few substitutions to make it more Weight Watcher friendly: I used fat free sour cream, 1/2 cup green pepper and 1/2 cup red pepper (for more color and more vegetables) and just a sprinkle of Parmesan cheese. Instead of salt I substituted Trader Joe's Salt-Free 21 Seasoning Salute. Delicious. I will be preparing this again and again.

Blueberry Corn Muffins

Big hit at our family brunch today. The family loves blueberry muffins and corn bread. Perfect combo. I too used applesauce instead of oil and whole wheat pastry flour instead of all purpose flour.

Sesame Green Beans

Very good! I was following the directions exactly, until... I realized the left over BBQ pork loin I was planning on heating up and serving alongside the beans had been used in someone's sandwich. I only had about a 2 oz piece left. So I cut it in half sliced it thin, then added those small pieces to the beans just before adding the broth. Delicious. We loved it!

Slow Cooker Tapioca Pudding

I love how easy it was to make! We really like Tapioca Pudding, but I hate how long it usually takes to make. Next time I will add the vanilla as others suggested, but this was great as written.

Sausage Balls

Our family loves these. Sons went away to college and came back with this recipe. I have a hard time with so much fat, so I use low fat sausage and low fat biscuit mix and of course real cheddar cheese. They taste just as good, but are at least a little healthier.

Blueberry Chicken Salad

We enjoyed it very much. I didn't realize until I was in process of assembling the salad that I had no lemon yogurt. I substituted plain non fat yogurt and grated lemon zest into it. I used leftover BBQ chicken breasts. When it was time to serve I sprinkled toasted walnuts on top and served with warmed whole wheat pita pockets. Ate half with pita on the side and then put the salad and lettuce inside the other half of the pita. It was delicious both ways.
