Pumpkin Swirl Bread

This recipe is very good, although too sweet! The ratio of flour to sugar is 1:1! I will cut the sugar down to one cup next time (I cut it to 1 1/4 cups, and it was still too sweet.). I also increased the nutmeg to 1/2 tsp because the first time I tried it it was a little bland.

Blueberry Muffins I

Use the lemon zest! It's an excellent contrast in taste to the blueberries. I don't know why anyone would want to leave them out. I also added a bit more sugar; more than 1/4 of a cup would give it more of a cake consistency, which I don't like. I like muffins to be muffins!

Beet, Walnut and Prune Salad

I'm an American living in Russia, and folks serve this to me often (without the prunes). However, I had to use another clove of garlic to match the taste of the salad that I often eat in Russian homes. Russians seem to like intense flavors of the food itself (rather than spices) so I'm not surprised they like it more garlicky than Americans may prefer.

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

I made it with long-grain white rice but that's all I could find. It turned out very well - really tangy and surprising. Not your average rice salad.

Oatmeal Apple Muffins

Authentic Russian Salad 'Olivye'

I'm an American living in Moscow, and this is THE recipe for inviting a Russian in for the New Year's holidays. (the first week of January) I usually see it with dill instead of parsley. One can use sour cream instead of mayo, or in combination, although my Russian friends all state emphatically that one must use... well, some say sour cream, others say mayo, others say a combination. I usually add a bit of raw onion, chopped, and substitute a fresh cuc for one of the pickles, but all that's optional.
