Wow! What a crowd pleaser!!! SO easy to make, so easy to adjust, and so impressive looking. My first attempt at a trifle, and I couldn't have been happier with it. Thank you for a wonderfully simple recipe that I can put together for any fancy occassion! P.S. I made this for Valentine's day, so I used white cake but colored some of it pink and some of it red to have more Valentine color. Adorable!

Cranberry Apple Muffins

Mexican Casserole

We LOVED it! I added some onion, garlic, and a red and a green pepper before the chicken. We also skipped the "casserole" part, instead just serving it more like a nacho chip appetizer... tossed some chips on the plate, ladled the mixture over it, and sprinkled with the cheese. SO yummy!

Easy Chicken and Dumplings

Added lots of garlic and a little basil from the garden, along with quite a few veggies. It was delicious! I actually just made biscuits on the side, and after we ate, I turned the leftovers into chicken noodle soup for my sister. Thanks for a flexible base recipe.

Pineapple Upside-Down Cake VII

Loved it! I made this for a day at home, and the husband, son, and I gobbled it up in only two days! I probably won't make again soon unless I'm taking it somewhere, since I can't afford the added pounds :). It was delicious, and my 2 year old loved helping me make it, so it's EASY. Thanks so much!

Green Beans with Bread Crumbs

These tasted fine, but my son (who loves green beans) didn't touch them. I did add some fresh garlic, but if I make them again, I'll add more. Also, my bread crumbs were homemade, so maybe store-bought would hold up better? It was nice and fast though!

Lighter Banana Muffins

Followed some other suggestions: added 4 oz applesauce, 1 tsp vanilla, 1 tsp cinnamon, and sprinkled a tiny bit of brown sugar on top. My husband liked them better than the unhealthy ones I was making! Since my son is addicted to banana muffins, these will probably be made once a week. Thanks for a healthier alternative!!!

Blueberry Zucchini Bread

This was great! I had a GIANT zucchini, so I doubled the recipe and made four regular size bread loaves (and still had enough to make a week of zucchini baby food!!). They did take significantly longer to cook full-size, which threw me at first. Yummy and looks so pretty! Thanks for the recipe!
