Lemon Square Bars

this was so easy and simple! i definitely agree with others the butter should be cut in cold (as with most pastry shells/crusts) because it really does make a huge difference. i made as-is and would not change a thing... however, i personally like the almost even ratio of crust to filling. this one is a keeper!

Boiled Bagels

I stalked this recipe for quite some time before deciding to make the bagels. The instructions were simple enough although, for a novice bread maker like myself, directing me to "add enough flour until moderately stiff" didn't aid me too well. When I went to turn the dough onto my floured surface, it was already rather stiff and quite hard to work with. But, like I said, that could just be my inexperience with dough. Also, my dough didn't rise very well the first time, so the finished product did turn out a little more dense than I would have liked. As other reviews stated, I let the bagels rise (the second time) for at least 30 minutes, added brown sugar to my boiling water and only boiled my bagels for about two minutes. Baked them on a large cookie sheet covered in PAM and cornmeal to prevent sticking. I also elected to make eight "normal-sized" bagels and am glad I did... I think the suggested twelve would've been a little small. Overall, good and easy recipe that easy to modify for various flavors. Would definitely use this recipe again!

Creamy Coleslaw

Fabulous and easy recipe for the most part, but felt it was lacking some flavor when I finished the steps (I did omit the raisins, but don't feel that is what left out the pizazz as other readers said as well). So, I added some Ott's Original Dressing and garlic powder and WOW did the flavors come alive! Also added salt and pepper to flavor. Placed on top of my BBQ pulled pork sandwich and it was great! Overall, good starting place, but not a way to end the recipe.

Chocolate-Zucchini Cupcakes

I'm always confused as to whether I should give a '5' when on the very first try, I make modifications. That being said, I do think this is a great recipe... with a few changes. First, call me crazy, but I'm not a big fan of chocolate zucchini cake, so I left all chocolate components out. Secondly, I cannot wrap my head around using a full cup of oil, so I used 1/2 c. of oil and one 8-oz. can of drained, crushed pineapple. The pineapple makes the cupcakes SO moist and garnered lots and lots of compliments! Furthermore, I added 1 tsp. of cinnamon for a great, spiced kick! Funny enough, I got 24 cupcakes and 2 mini loafs out of this recipe. To take the cupcake up a notch, I covered in cream cheese frosting. It's a keeper in my book.

Cream Cheese Frosting II

Very good, basic cream cheese frosting! I only used one cup of powdered sugar and thought it was plenty, but I think it depends on what you're frosting as to how sweet it should be. Very easy and the only recipe I'll ever need or use!

Twice-Baked Mashed Potatoes

Overall, the recipe is a great starting point. For my mashed potatoes, I used gold potatoes whipped with about 5 tbsp. of butter and 1/2 c. sour cream. I then added raw (didn't saute - will soften during baking) green onion to the potatoes, instead of regular, left out the green pepper, and added about 3 cloves of minced garlic. Mixed in some of the bacon and cheese and salt and pepper to taste. Transferred to my baking dish and sprinkled the remaining cheese and bacon on top. Baked and drooled at the sight of the melting cheese :D Very, very good recipe idea! Will be sure to use on a regular basis!

This is one-heckuva recipe! Cookies come out great! I agree with previous reviewers - if you are making the cookies as big as the recipe calls for, it's best to reduce the amount of cookies on the baking sheet because they do grow quite a bit... I actually only put 6 on a sheet. And, I needed about 17 - 19 minutes to get the cookies to the right baked consistency. These are just my own personal findings, though! This receipe is definitely worth a try!!

Truck-Stop Buttermilk Pancakes

So, I wish we could give ½ star... I'd give this recipe a 3½. There have been a few recipes where I stated they were good "starting points" and these pancakes definitely fall into that category. I honestly don't see what all the hub-bub is about. The recipe, for me, is not how pancakes should taste. I believe it has something to do with the amount of baking powder/soda in them. So, to try and combat that strong taste, I added cinnamon and vanilla - MUCH BETTER. I made half plain (for me) and half with blackberry syrup (for my husband) and his came out better. I think if you're going for a pancake to douse in fruity toppings, this could be it. But, for pancake purists who like only a little pat of butter and syrup, not so much. Also, I halved this recipe and still came out with about 20 pancakes! Think I'll try a different recipe next time...

Cheddar Chicken Spaghetti

Very quick and easy weeknight meal. Was basic and quite general - not anything new or exciting. I added a few cloves of garlic to give it a kick! Not a real winner, but will definitely use again.

Simple Scones

Great recipe! I had some fresh blackberries I needed to use up and thought this would be a great recipe to do so! Although the dough is messy to work with, especially fresh berries (should have frozen them), there's not much effort needed for these scones. Great tip on grating the frozen butter - way easier than cutting it in! Will use again and again!

Zucchini Cornbread Casserole

Wow, wow, wow! This is one of the best ways to use up fresh, summer zucchini - second only to zucchini cupcakes ;) I made this exactly as written (except I did drain my shredded zucchini by placing it in a clean kitchen towel and squeezing it) and it was fantastic! Thanks for the great recipe... will definitely use as a go-to side dish!

Fudge Brownies I

I really, really like these! I used the 12T cocoa powder/4T butter substitution since I didn't have any squares of chocolate. Easy recipe to follow and they came out great! I also only used 3 eggs and thought the 'fudginess' was spot on. Thanks for the recipe!

These were okay... nothing above and beyond spectacular, though. Mine didn't come out very fluffy - seemed rather heavy and dense. Followed the recipe exactly as written, but the results could have stemmed from something I did in the process.

Chocolate Cream Cheese Frosting

Excellent! I had to substitute the 4 oz of baker's chocolate for 12T/4T of cocoa powder and oil, respectively, but it worked fine as always. Also, I used skim milk instead of the evaporated. Even with these small changes, the recipe delivers on both ease and taste! I won't ever buy another can of frosting again!

One Bowl Chocolate Cake III

As others have said, this is the Hersey's recipe for chocolate cake. That being said, this is a good one! The cake comes out really moist and flavorful - I even left out the vanilla by accident, which I can't believe considering I'm a vanilla fuh-reak! Great, great cake - and I'm not even that big on chocolate cake. No more boxed cake mixes for me!

Downeast Maine Pumpkin Bread

This was absolutely delicious! Only change I made was to substitute the cup of oil, I used an 8 oz. can of crushed pineapple. Makes it so moist and not so bad to eat! Oh, well I guess I made another change... used 2 tsp of pumpkin pie spice, rather than each individual spice. Very, very good! Will definitely keep in my rotation. Thanks for sharing!
