Apple Brownies

Reviewed: Sep. 18, 2014
We really liked this recipe! I made only minor changes to make it a little bit healthier, as I was serving for an after school snack. I made with whole wheat flour and I cut the sugar down to 1/2 cup ( it was still plenty sweet for us). Also, I used pecans instead of walnuts just because that is what we prefer. These were excellent. I baked in a 8 X 11.5 glass dish for about 30 mins and the consistency turned out just like brownies. Two of my three kiddos loved them and so did my husband and I (my middle son is super picky!!!) Thank you for the "keeper" :)

Pear Jam

Reviewed: Aug. 6, 2013
Oh my goodness!! This recipe is TERRIFIC!!! My kids and I are licking the spoons, and pots as I write this :) I followed the recipe exactly, except I decreased the sugar to 4 1/2 Cups. I used very ripe pears and the jam is REALLY sweet. I could have almost used even less sugar and it would have been sweet enough. But it is still very, very good. Thank you for this keeper!! Now I am hoping our pear tree will produce as well next summer so I can make this again!!! :)

King Cake in a Bread Machine

Reviewed: Feb. 12, 2013
Oh my goodness!! This cake is divine!! I made it for Fat Tuesday and my husband, children, and I all loved it!! I made it exactly as directed, but had to cook mine about 25 minutes to get it done. Next time I will omit the nuts (I only put them on half this time and we all agreed the side without was our favorite). Also, I will double the cinnamon/sugar in the middle just because a couple of bites were without. But this is a definite keeper! Thank you for sharing!!

Cindy's Jambalaya

Reviewed: Feb. 12, 2013
This was fantastic!! I made it for Fat Tuesday and my husband and children loved it. I did add a little chicken, but other than that went precisely by the recipe above. This is a keeper for sure!! Thank you :) And, just a fun little side note...I used to teach school in the little town where Conecuh Sausage is made. It is a family favorite!!!

Easy Drop Cookies

Reviewed: Jan. 7, 2013
Such a nice cookie with afternoon coffee...not too sweet and very easy to put together. I sprinkled plain sugar on the top of mine and then added a little cocoa powder to a few and a little cinnamon to a few. It changed the taste just enough to make each one unique. They were a hit with my three kiddos. Thanks for sharing!!! :)

Chewy Brownies

Reviewed: Aug. 21, 2012
I made these for my boys for an after school snack. I just used a pinch of salt and I used agave nectar instead of the corn syrup (b/c that's what I had on hand). The kids called them "BEAST!"......that's good! :) Thanks for the recipe!!

Banana Blondie

Reviewed: Apr. 10, 2012
I followed the directions precisely, except replacing the aspartame w/ 1 Tbsp brown sugar. Very yummy! My three-year-old loves it. It does taste a lot like banana bread, but that's fine with me because I really like banana bread :)

Garlic Alfredo Tilapia

Reviewed: Feb. 17, 2012
FABULOUS!! The only thing that I did differently was make my own alfredo sauce instead of using the jarred kind. My son said this tasted like something you'd get in a nice restaurant at the beach!! A keeper for sure. Thanks :o)

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Jan. 31, 2012
These were so yummy! A definite keeper! I baked them @ 425 for about 15 minutes instead of frying. Also, I just glanced over the directions and didn't reserve any of my chiles. So to give the sauce a little more taste I added about 2 Tbsp of jarred salsa I had in the fridge. It worked out fine and my family of 5 enjoyed them a lot. Thank you!!!

Fish Chowder II

Reviewed: Oct. 11, 2011
My family and I LOVED this chowder....even my two picky little ones!!! I added some diced carrots in with my onions and sauteed them. And I added some fresh spinach leaves for another veggie. They blend right in and are barely even detectable. I also decreased the amt. of water I used because of other reviews. Also, I used new potatoes, diced w/ skins on (because I had a bag of those on hand) and I had to use a cylinder of frozen cream corn, again because that's just what I had on hand. It was a cold, rainy night and I didn't want to have to get out and go to the store. Thanks for this definite KEEPER!! Can't wait to share it with my mom :)

Apple Pan Betty

Reviewed: Oct. 5, 2011
Wow!! What an excellent recipe!!! I am always looking for ways to use apples in fall snacks for my kids. They all LOVED this!! And the best part is that it was super quick and easy!! I'll be honest, I was a bit skeptical about the bread, but I read other reviews and decided to give it a try. I used whole wheat sandwich bread for my bread cubes and they turned into delicious little squares of cinnamon, sugar, & butter goodness!! I put this one in my "keeper" book. Thanks so much for sharing!!!

Mulligatawny Soup I

Reviewed: Oct. 4, 2011
Oh, my!! Fabulous!!! I followed directions as written except I substituted olive oil for the butter to saute my veggies, used brown rice, and threw in a little fresh spinach and let it cook down in the soup. I even put the heavy cream on top...yum!! I also tried it with low fat sour cream in place of the heavy cream and that was dynamite also. Thanks for this great recipe!! A definite KEEPER!! :)

Dilled Ham on Rice

Reviewed: May 25, 2011
My mother-in-law brings a huge honey ham to our house twice a year....once for our Easter celebration and once for our Christmas celebration. So I am always looking for new ways to use up the left over ham. This was quick, easy, different, and yummy. I did leave out the celery because not all of my children care for the taste of celery cooked into things. But all 3 of my kids liked this recipe and gave it "keeper" status. That doesn't happen often, at my house, that they agree on a "keeper". So I will certainly be making this again. Thank you!!

Spinach Pancakes

Reviewed: May 15, 2011
I decided to put garlic powder in these instead of the paprika and I really, really liked them. My hubby and my two-year-old also liked them. My 7 year old liked them only if they were dipped in Ranch dressing (which was delicious) but my 14-year-old didn't care for them at all. Oh well, can't please all of the people all of the time!! :)
