Quick and Easy Clam Chowder

What an incredible recipe! I loved it! The taste is second only to Ivar's! The first time I tried it, I didn't have time to sit and wait for my crock pot, so I just mixed it all in a pot and cooked it and then let it simmer. It worked just fine. My husband - who is totally blind - put this dish together this morning before we left for work and he was amazed at how easy it was for him and plans to "show off" to my parents tonight (who are coming for dinner) that he did it himself. :) Also, my little sister's fave food is clam chowder, so her birthday present this year is a special bowl & placemat, this recipe, and all the needed ingredients. What a family-friendly recipe!

Alice Chicken

I thought this recipe was really good, but I made it a bit differently (in my mind easier cause I hate using my broiler): I cooked the bacon (thick sliced maple syrup flavored) most of the way through. Then I sautéed the mushrooms until they were almost completely tender/cooked. Then I browned the chicken and used the Worcestershire sauce in cooking it (probably 2 - 4 tbs.). Then I took the chicken out and cut it into large bite-sized pieces. Then I put the chicken, bacon, and mushrooms back in the pan and set it on med-low and added the honey mustard dressing... just enough to have a couple of spoonfuls per plate after coating the meat. Then I served it over rice and added the cheese. It was delicious!

Beer Bread II

Overall I thought this recipe was really good. I personally picked the peppers out of my slice, but everyone else I had over for dinner loved it... especially the kids. They got a kick out of being "adult" enough to have something with beer in it. ha ha

Acapulco Chicken

My husband and I both rather enjoyed this meal. I cannot eat foods that are extremely spicy, so I only added one Jalapeno and used under a teaspoon of chili poweder. I also used about half the hot sauce and added no salt or pepper. Even then it was rather spicy! But it was still good. Although I generally make my fajitas that way, these seasonings (and the tomatoes) added that extra something that made it a nice change. I served it over spanish rice.

Cabbage Fat-Burning Soup

Both my husband and I really enjoyed this soup. I generally don't have so much tomato base in the soups I make, but this was delicious, and very filling. I only ate one small bowl and was stuffed! The only thing I felt it lacked was a little minced garlic and some black pepper.

Cooking Light magazine's Chicken Parmesan

I found this very delicious and easy to make. The only problem I encountered was I felt I didn't get enough breading on the chicken. (I'm honestly not sure I've ever made a breaded item.) Regardless, the meal was outstanding and even my husband - who doesn't like chicken OR healthy foods - loved it. I served it over tri-colored pasta.

Awesome Carrot Cake with Cream Cheese Frosting

This was a great recipe... I felt it was lacking raisins though... I might add that next time... or possibly more pinapple. I made it into cupcakes instead of a pan-cake so I could distribuite them at work for Halloween and everyone LOVED them!

Barbeque Halibut Steaks

This was an *excellent* recipe! My husband, who is pickier than a child, absolutely loved it! As did all of my company! It was delicious and it didn't take away the flavor of the fish.
