White Bean Chicken Breast Chili

I had already made some white beans and had leftover marinated chicken so I was looking for some flavorful spices to add to them since I was putting it all in the slow cooker. Onion, garlic, red bell pepper and jalapeno was cut and added in the morning and the spices, since ground were added when I got home from work, since adding ground spices and cooking all day would make them bitter instead of flavorful. A half hour is all they needed to meld together. Instead of sugar added 1/2 t cinnamon according to another one of Chef's recipes. Wonderful!! Highly recommend this and will someday in the near future try it according to Chef's exact recipe. That's whats fun about cooking, making it your own!!

All-Day Apple Butter

Very sweet!! I like to make a recipe as written the first time and then I will change it to our tastes. Wonderful flavor, just too sweet, and needed way more time to break down the apples. I ended up putting it into our Magic Bullet to puree then put it back into the crock to thicken. Will definitely make this again though! Put it into the crock the night before and let it cook away while you sleep and even continue while you go to work. Longer does not hurt the recipe.

Banana Crumb Muffins

Loved it, but made a few tweaks. Used half whole wheat/half white flour and added 1/4 cup ground flaxseed to the dry ingredients. The bananas were moist enough to counter the added bulk. Also to the topping I added 1/3 c oats to make the topping more of a healthy strudel. I will definitely make these again

Fluffy Pancakes

Yummy!! During the 2nd time making this, a permanent addition is substituting 1/2 the white flour with wheat flour, some vanilla extract and 2 teaspoons of cinnamon. This makes for a tasty pancake which doesn't even need syrup!When I have buttermilk I always use this instead of the soured milk also.

Delicious. I did add several cloves of minced garlic which was suggested and decided to leave the rice out. Also used the leftover ham bone from Christmas. Full of flavor, didn't need anything else added. Will make again. Although technically this makes it a Black eyed pea soup. Still rates 5 stars. Yummy.

Spinach Lentil Soup

Wonderful, filling soup. Used a crockpot that could double on the stovetop to saute meat with onion, carrots, celery, & spices, then put it onto it's hotplate. Doing this made for wonderful flavor of the cooked meat and veggies staying in the pot, so no loss of flavor. Added 12 cups homemade chicken broth , no water, for a richer taste. Glad I used this much broth since the lentils and brown rice absorbed a lot of liquid. Added 1/2 a butternut squash for maximum vitamins during the last hour of cooking in the crockpot. Didn't have fresh spinach so used frozen. The leftovers are terrific and but needed some more liquid so in went a can of broth. Served with homemade onion bread. Will definitely make this again. Very easy and all ingredients were on hand. This is always a plus for working women. A crockpot and pressure cooker are life savers for nutritious meals.

Chinese Chicken Fried Rice I

Quick basic recipe made quicker with the addition of frozen stir fry veggies, rotisserie chicken, leftover scrambled eggs with ham, pepper, fresh grated or 1/2 t powdered ginger. Top it off with the addition of shrimp which cooks in minutes while the rice is steaming makes a wonderful, quick weeknight meal. You can use anything you have left in the refrigerator that you want to use up. Makes this a very versatile dish.

Turkey and Tortellini Alfredo

Great way to use leftover turkey or roasted chicken. To lower calorie count I used equal parts fat free half and half, and 1% milk. To make it creamier I increased the fluid to equal 1/2 cup. Also used light Alfredo sauce. I used 6 cloves of crushed garlic to heighten the flavor. With the extra fluid it can be made ahead of time, refrigerated, and cooked later without drying out. Next time I will try spinach tortellini for a different flavor. This will definitely be a recipe called upon when leftovers are abundant.
