Oatmeal Peanut Butter Cookies III

Wowsers! Delicious! I like to measure the oatmeal and then blend it in my vitamix to a powder - something about the texture I like. Very good cookie with the filling, my co-workers scarfed them down fast! And yes, double the recipe I think I only got about 2 dozen sandwiches (barely).... delicious!

Apple Bread

I won't be making this one again. 3 stars for taste only. Tasted good, but like another reviewer said the batter was way too dry and crumbly. I split into two loaf pans like the recipe states, and they barely rose halfway up the pan. The loaves of bread were delicious it just wasn't anything like the picture!

Butterscotch Apple Dumplings

Made this last night for my hubby who is a LOVER of apple pie and scaled it down to use 2 apples. Hubby loved it, the dish just took FOREVER in the oven (it seemed) to make the apples soft enough to his liking... haha. I didn't peel them either, next time I will peel the apples. DH loved the sauce it made the most. Very yummy!

Jif® Peanut Butter Blossoms

Yummy! My hubby's favorite... I doubled the recipe and used half butter and half Crisco (to keep it's shape) and froze the kisses like other reviewers have said. Worked perfect for a #50 scoop and 8 minutes in the oven... yum!

Pizza Dough I

I did do the proofing of the yeast like the yeast package and others here suggested... also added some garlic and onion powder to the dry ingredients. Let the dough rise about 30 mins, punched down and spread into a 9x13 greased dish, baked for 5 minutes, then put all the ingredients and baked for 20 mins. Used the BBQ Chicken recipe on this site and this was DELISH! Thick deep-dish crust, could have easily made 2 thin to medium thickness crust. Will definitely make this again!

Cuban Picadillo

I have been trying new international dishes for my family... I tweaked this recipe like others and it was a hit. I made the "sofrito" as others commented first and left out the cilantro... also, I halved the entire recipe. Halving this recipe still made way more than enough for 4 adults and we had leftovers. I also let this simmer for about an hour in order to let the flavors marry... used less olives (about 6 ounces) and golden raisins.

Broccoli Quiche with Mashed Potato Crust

Time consuming, but was delicious! I had a lot of broccoli and potatoes to use up (shop at Costco) ... I didn't follow the recipe exactly, but the mashed potato crust is what attracted me to this recipe. I made individual quiches in custard cups for a side dish at dinner. Will definitely make it again...

Squash Stuffed Chicken Breasts

The recipe as is needs some work. I took suggestions from other reviewers and added some poultry seasoning, 2 garlic cloves, and about 1/4 tsp red pepper flakes. I also didn't have squash on hand so I used yellow zucchini and broccoli. I also used some pins to keep the filling in while browning and baking. With all these tweaks the recipe was good... and chicken was moist.

Fish Tacos

I only made the white sauce, we grilled out fish for a healthier taco. The white sauce was a hit with my family. I blended everything in the food processor and after sitting in the fridge about 30 minutes the sauce thickens up nicely.

Belle's Hamburger Buns

I am a rookie when baking breads, this recipe was sooo simple! I proofed the yeast beforehand like some other reviewers suggested...and also added some garlic powder. The rolls baked up beautifully! The only problem I had with these is I should have made the rolls bigger, our burger patties were falling off the edges. Thanks for a great recipe!

Best Lemonade Ever

This recipe is delicious... gave it a 4 star only because my family found the amount of sugar used is waaaaay too much. We tend to like a nice balance or a tad more sourness rather than sickeningly sweet. Great beverage during the summer months!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

I don't eat salmon but my family does... and they LOVED this! Said I could make it again anytime... I didn't have fresh dill so I used dry and halved the recipes since I didn't have 3 pounds of fish. Also, buying a cedar picket from Home Depot and making your own plank is MUCH cheaper than buying them premade for 3x as much... delish!! =)
