Banana Cake II

This recipe turned out very well. It made 24 standard cupcakes (took about 17 minutes to bake so I question whether or not a round pan would bake that quickly as described). I paired it with a peanut butter buttercream frosting and the whole family loved it. My only complaint is that I was hoping they would turn out a bit fluffier than they did. But then again, bananas are a heavy fruit so I doubt you can get any banana cake made with real bananas to be as light and fluffy as a regular cake. All in all a great recipe.

Chocolate Banana Berry Nut Bran Muffins

tooting my own horn here :) these are delish! Feel free to add different berries or other fruits to this recipe. You can also play around with the flour ratios and add more bran if you want. You can even try different spices! I came up with this recipe by playing with other recipes so have at it but I think it is great as it is. Enjoy and happy baking!

Rhubarb Strawberry Crunch

A very good recipe but I cut it in half to make a 9x9 pan, used 2 cups of strawberries and 1 cup of rhubarb. I kept the cook time at 45 minutes. It was delicious. I also think that it was a tad sweet and the sugar could be reduced by about a third.

Finnish Pulla

This recipe is very close to the one that my family makes each Christmas so it must be good. I won't be straying from my family recipe but for those of you out there making this bread here's a tip: Put at least 1 tablespoon of cardamom in. If you're worried about the spiciness of it, don't, there is plenty of sugar in there to balance it out.

Cocoa Apple Cake

My boyfriend and I made this as an experiment and it was fantastic. I added extra cocoa and a few extra chocolate chips. We put it in two loaf pans and baked it at 350F for close to an hour until a toothpick came out clean. Sorry I don't know the specific time, just keep an eye on it :)
