Cranberry Orange Loaf

This is a great quick bread recipe. Have been looking for a bread recipe that uses fresh cranberries. Only change I made was to cut up my fresh cranberries and used walnuts instead of pecans. Makes a moist, tasty bread which also freezes well.

Karen's Cranberry Apple Sweet Potato Packet

Great recipe and very easy to make. I used dark brown sugar and craisins, wrapped in foil and put in a 9" square pan. Cooked for 1 hour at 400. Reheated the next day very well. Thinking of adding this to my Thanksgiving menu next year. Will definitely cook again.

Best Toffee Ever - Super Easy

This was my first time making toffee. I cut the recipe in half as I wanted to see how well it came out. The only change I made was adding 1/4 cup water with the butter and sugar. I let it cook on a low-medium heat for about 30 minutes. I stirred til the ingredients came to a boil, then stirred occasionally til it registered 275 on the thermometer. Came out perfect.

Tuna Noodle Casserole from Scratch

To keep the fat content down, I used rotini instead of egg noodles, made the sauce with fat free milk (doubled the recipe), added more onion and garlic, and no cheese or bread crumbs in the top. Came out moist and tasty.

Delicious Ham and Potato Soup

This is a fast, simple soup recipe. Instead of a bouillon cube, I cooked the potatoes in canned chicken broth and added some chopped carrots. When I made the milk mixture, I added about 1/2 t. jarred garlic to the margarine before I added the milk (no fat milk). Total time from cooking to eating about 30 minutes.

Empire Cookies

These are really easy to make filled cookies. I used raspberry jam for some of the filling and orange marmalde for the rest. I also added orange flavoring to the icing. These freeze very well.

Cranberry Pistachio Biscotti

This is a simple biscotti recipe that you can alter in many ways. For the cranberry, I used walnuts and added some orange flavoring intead of vanilla. I also made chocolate biscotti by adding some Hershey cocoa and chocolate chips and using a little less flour. I like this recipe because the biscotti is a little softer when done.

Russian Mushroom and Potato Soup

Quick and easy soup to make. I added celery and left the bay leaf in longer for more flavor. I used fat free milk and added some fresh corn when I had it.

Gramma's Apple Bread Pudding

Very easy recipe to make. I used raisin challah bread and added some walnuts. I also substituted maple flavoring for the vanilla and added more cinnamon. I didn't make the sauce. If I wanted something extra I would get some vanilla ice cream or whipping cream but it was great without it. I halved the recipe and it fit in a 8 x 8 pan and cooked in 45 minutes.

Best Big, Fat, Chewy Chocolate Chip Cookie

The best chocolte chip cooke recipe I've ever made. Only change I made was using dark chocolate chips which were frozen. Cooking time was about 20 minutes for 1/4 cup of dough. Cookies are just like those you find in a bakery.

Zucchini Bread III

I really liked this recipe. I used 3/4 cups of brown sugar and applesauce instead of oil. I also used wheat pastry flour because I had it available. The bread is not soft and mushy the way so many zucchini breads are. Before adding the raisins, I soak them in boiling water for a few minutes to soften them.I add cranberries (fresh) when I don't have raisins. It also freezes very well.
