Pumpkin Bread IV

YUM, loved it!!! Here are my healthy alterations: used only 1 cup of white flour and substituted 1 cup finely ground raw sunflower seeds and 1 cup finely ground oats for the rest of the flour. I used 1 cup of sugar instead of 2, added 1/2 cup of honey. I also added 3 tsp of vanilla, one egg, used only 1/2 cup of oil and increased the baking powder by a smidge, and added 1/4 tsp of cardamon. I made them in muffin tins. The muffins ROSE (I was surprised thinking they would be flatter because of the gluten free ingredient additions!). EXCELLENT texture and will definitely make these again and again!!!!!!!!!

Oma's Rhubarb Cake

FAVORITE RECIPE... Made it an easy ONE BOWL RECIPE by whisking together eggs, sour cream (or yogurt or greek yogurt)and sugar and adding a tsp of almond extract, then adding flour with salt and soda mixed into it a bit and mixing that in with a wooden spoon, then dumping the rhubarb in (I use more than it calls for!) and stirring, then pouring into greased pan and baking, subbing the streusel topping (though that is good too!) for a powdered sugar glaze when it comes out of the oven. THAT is fast :)

In Switzerland, they call these "schnaegglis" and my mom (and we) ALWAYS made this out of leftover pie crust :)

Bircher Muesli (Swiss Oatmeal)

The traditional Swiss Bircher Muesli is made with grated apples-though there are million variations one can do with it, I have never seen it in Switzerland with chopped apples :) I make mine with milk and yogurt, and any fresh, in season, or even frozen fruit... one time with strawberries one time with blackberries or even blueberries, and I don't do all the nuts and misc. stuff (though I am sure that's tasty too). The gist of it is grated apples, oats and enough milk or yogurt to let it become softened, if you want it less mushy, add less milk, then add in whatever fruit and whatever sweetener you want (I use stevia).

Great flavor-am I BLIND though? Did it really not call for a greased pan???? It did NOT come out of the ungreased pan, though the taste is super yummy! :)

Carrot Cake I

YUM...MOIST...GREAT cake! Well worth making! Pared down the oil to 1 cup, then doubled the recipe for a large two layer baby shower cake, will omit 1/2 tsp of baking soda next time. I was afraid from how it smelled that it would have a baking powder/soda didn't! But I will make that adjustment as a test if I double the recipe again.
