Tropical Lime Cake

Reviewed: Jun. 6, 2011
Made this cake for church Saturday. Made the glaze (halved the recipe for the glaze) and poured over warm cake. Also took advice and put Cool Whip over the cake with lime zest and slices of lime. Husband said cake "way too sweet." Had hoped that the Cool Whip would bring down the sweetness--kinda had a feeling that cake would be too sweet. Next time I eliminate the glaze and just put Cool Whip over it with the lime zest and lime slices. The cake was not a dud though. Smelled wonderful and was told that it was absolutely moist. Will make it again with changes. Still thinks it's worth 4 stars!

Banana Cheesecake with Caramel Sauce

Reviewed: Apr. 25, 2011
I made this cheese cake for church Sunday. Got great reviews! Husband even said that it was good (also could tell the way he was eating his 2 pieces and scraping the plate for crumbs) and not too sweet. I added more bananas though, had about 2 cups of mashed banana; used banana extract instead of vanilla extract and added about 2 tablespoons of brown sugar with the white sugar. Also used jarred caramel sauce, very sparingly by sticking a fork in the caramel jar and then drizzling it over the cake using the prong ends of a fork; and layed on top of cake 1 cup of toasted almonds for good measure. Again got great feedback.. Definitely will be making this again, Lord's willing.

Ice Cream Sandwich Desserts

Reviewed: Mar. 15, 2011
I made this dessert for church. I received sooo many raves I was embarrassed. It was great! I did add, however, some caramel sauce on the top layer--something about salted peanuts and caramel sauce just says, yes!

'Seconds Please' Peach Cake

Reviewed: Nov. 11, 2009
Baked this cake as stated. Had to add about 25 more minutes for cake to get completely done. Suggestion: drain most of the liquid from the cans of peach pie filing to reduce baking time. I also added a few frozen peaches since my cans of peach pie filing had more liquire than peaches.

Bread Pudding II

Reviewed: Aug. 25, 2009
I've tried this recipe one time. Since I'm on a diet I didn't taste it, but took it to a church potluck. My God! everyone loved it! I cut off the crust as suggested, used potatoe bread and also added some crumbled shortbread cookies to the recipes. Everyone said they believe the crumbled shortbread cookies really made the difference. Try it!
