Born in Mississippi, I have very Southern roots, and living in Ok. & Tx. I certainly have a Western (Tex-Mex)flare. I have a home in the Colorado Mountains and am trying to work part ime so that I can split my time in the two places.
My favorite things to cook
I love to cook everything, but working in Houston with long commutes means quick/easy meals, and when in Colo., we are 4 wheeling, fishing, hiking so I love to have fix-a-head meals that are hearty. We also have spur-of-the-moment neighbor get togethers,so it helps to have wonderful homemade things in your freezer!
My favorite family cooking traditions
For some reason, my deviled eggs are always requested, which I find perfectly strange considering I hate eggs and NEVER taste them.
My cooking triumphs
I guess if I am triumphant at anything, it would be my ability to guess ingredients, and to adjust and cut down recipes. I asked a chef for his spinach souffle recipe one time and he thought he was being funny by giving me the recipe using 40 slices of bread, 1 1/2 doz. eggs etc.....BUT I did it, and it was perfect!!
My cooking tragedies
The 1st time I made Salmon Crochettes as a new bride, my husband bragged on them but I told him I would never make them again because it took me 1.5 hours to take out all the cartilage. Even he who did not cook, knew that you left them in. I felt so stupid. I also gave a couples baby shower and served shrimp cocktail on ice, but accidently bought raw shrimp instead of cooked. In a hurry, I served it and the mother-to-be gagged and threw up.

Thanksgiving Beets
Freezing ahead of time was the initial appeal for me, but these were really good using fresh beets, and I wanted you to know that I used Splenda Brown Sugar Blend and it was still great. Looking forward to just thawing and serving this at holiday time!

Southern Fried Green Beans
I have friends and family that only like canned green beans. This is a wonderful way to dress up the ho-hum! Suggestion: Cut back a little bit on the sugar and use smoked thick sliced peppered bacon. The sweet/spicy thing is great!

Simple Sicilian Salad Dressing
My Italian husband liked this dressing for its simple, UNDER the top taste. He always thinks salad dressings are too overpowering to really taste the vegetables in a salad. The second time, I added garlic and he was OK with it.
