Paleo Chocolate Frosting

I can't even describe how delicious this is! By itself, you can taste the avocado, but it is not overpowering and still delicious - a great, healthy dessert. Used as a frosting, it tastes just like regular frosting and is AMAZING. I topped the Amazing Chocolate Quinoa Cake and the Gluten Free Chickpea Cupcakes with this frosting (both from this site) and couldn't stop eating. I'm going to try making a big batch and freezing for later, since avocados and gauc freeze so well. I don't feel guilty giving my 2 yr old "frosting" for breakfast with this recipe!

Amazing Chocolate Quinoa Cake!

These were really, really good. I used less sugar than called for and dark chocolate chips. My 2 yr old loved them and I don't feel guilty giving him a chocolate "cupcake" for breakfast. I topped with the Paleo Chocolate Frosting from this site and they were just outstanding!

Gluten-Free Chocolate Chickpea Cupcakes

AMAZING. Just amazing. I can't even believe how good these are, and that they are really pretty healthy for you! I topped these with the Paleo Chocolate Frosting from this website and they were devoured. I used dark chocolate and more coconut oil than butter. My 2 yr old loved them. I'm going to make a huge batch to freeze so he can have chocolate for breakfast!

Red Raspberry Vinaigrette

I had to tweak this a bit because I thought there was WAY too much vinegar. I added a bit of sugar and a bit of salt as well as more oil to even it out. I used an all-fruit spread too. I thought it was great and would try it with strawberry all-fruit too.

Grilled Peanut Chicken

Wow! This was outstanding! I added a bit more than a dash of cayenne, and had to add quite a bit of grapeseed (or olive) oil to make it more of sauce consistency for basting, but it was fantastic! Rave reviews from dinner guests. SO easy and quick too! Careful when grilling the chicken so you don't burn it - I think its better to wait until the end to baste it.

Brazilian White Rice

Delicious! So easy and quick, too! I think I used a bit more onion - probs about 1/4 cup but I didn't think it was too overpowering. Served with Grilled Peanut Butter chicken from this site. Yum!

Butternut Squash Pizzas with Rosemary

OH. MY. GAWD. Can you say good??? I've made this twice in 2 weeks now! I ground some fennel seed with dried rosemary and sprinkled that over the squash & onions. I made just one large pizza, and on the crust I spread a light coating of Aldi's Balsamic Glaze...you could make your own (its a thickened balsamic basically) or you could use a decent balsamic vinegar. Then I put the squash mixture, added moz, shredded parm, and some crumbled feta. SO good!

Vermicelli Noodle Bowl

really good! I didn't have any pickled carrot or radish. This is a really versatile dish - I picked up all the ingredients from an Asian store for really cheap. Will def make again!

Mound Bars

These were SOOOOO good! I made the crust, then schlopped on the coconut/milk mixture and sorta smoothed it out. It is difficult to do cold, but the warm crust helped. I baked it again per directions, but took it out after 10 minutes or so and spread the coconut out more. I wound up having to sprinkle a bit more coconut on top, so you may want to add 1/2 a cup more to the milk mixture to begin with. I topped with sliced almonds and let setup overnight before cutting. DELISH!!!

Strawberries with Balsamic Vinegar

These were delicious! I started with about 1/4 a cup of sugar for 2 pounds of strawberries, but kept the balsamic at the stated amount. After an hour or so, I stirred them up again and tasted to see if it needed more sugar. I added about another 1/8 of a cup to taste. We had these over angel food cake and they were awesome!

Parmesan Crusted Chicken

All I can say is WOW! This was SO good I couldn't believe it! The chicken was really moist and the flavor was great! I did prepare it the day before and let it sit in the fridge with the may/cheese topping over night, adding Panko bread crumbs just before baking. You could also add some seasoning this to jazz it up, but it is really good as is!

Almost Eggless Egg Salad

Wow! REALLY good! My husband still does not know this is not real egg salad. I did try to sub the mayo with Greek yogurt as I have been very successful with that in the past, but it was an utter fail. Way too sour. So I did use real mayo, and I strongly recommend doubling the sauce, as the tofu soaked it all up and it was rather dry. I also only used 1/2 tsp of turmeric as I didn't know if that was adding to the bitterness. Skipped the dill & relish since we're not fans. Served on toasted English muffins. I will definitely make this again!

Chicken Korma II

OMG this was delicious! Even my husband really enjoyed it! I followed the directions exactly and served over cinnamon-scented basmati rice (throw a cin stick in while the rice cooks). I went back for seconds, which I rarely do at dinner!

Nana's Mashed Turnip

Tasty! I diced & then roasted the taters & turnips, also used Yukons and about 5 medium. Didn't realize I was pretty much out of butter, so I only added 1 tbsp. The sugar gave the turnips a little extra kick. Neat change for mashed taters. Adding some cheese & garlic might be good too.

Chicken Breasts with Plum Salsa and Basmati Rice

This was just ok. First of all, the called for amount of habeneros was way too much - I don't know how anyone could have eaten the salsa with that much habenero. I used one and I thought at first we wouldn't be able to eat it it was so hot. I pureed some of the salsa and then deglazed the pan with some white balsamic and then threw the salsa in with the pan juices. That seemed to calm the heat down. I probably wouldn't make again.

Make Ahead Lunch Wraps

We really love these. I'll usually make a large batch of them to freeze for future lunches. I will mix up the ingredients sometimes too - adding shredded chicken, etc. They are great for a quick snack or lunch.

I LOVED this! I used whole wheat pastry flour, unsweetened applesauce for the fat, and cut down on the sugar because all I had on hand was sweetened coconut. It was so moist it was like cake!

Jalapeno Popper Wontons

These were tasty, and really need to be fried at least a bit in order for them to be crispy. I made the mistake of just baking them, and they didn't get brown or crispy before they started leaking. I think just browning them in a fry pan with a touch of oil and then baking them for a healthier version would be much better.
