Morning Glory Muffins I

I love these! I make them as written, although I confess I add a little brown sugar to the wheat germ/walnut topping to make it more of a strudel topping. It's a perfect little sweet treat for breakfast that makes you feel good about your choices!

Classic Goulash

This is good and satisfying, and both my husband and I like it, which is a rare thing because he's super picky. I make it with ground turkey instead of beef, and I use whole wheat mac elbows instead of regular. I also add a generous pinch of chili flakes as my guy likes a kick.

Hungarian Mushroom Soup

I absolutely love this soup, and have now made it a kazillion times. I like to try different combinations of mushrooms. A favorite adaptation is to use half butter, half bacon fat, which adds a ton of flavor. I have also used whipped cream cheese when I was out of sour cream! We drink soy milk instead of cow milk in my house and I tried making it with soy milk once, but that didn't work out as well as I had hoped. Otherwise, recipe as written is just great.

Caramel Macchiato Cheesecake

I made this for company last week and it was a huge hit! My husband took the leftovers to work the next day, and everybody there raved about it too. The only complaint is that the caramel sauce hardened on the cheesecake so that it was difficult to get through it with a spoon - or your teeth! I will definitely be making this again.

Wild Rice and Squash Pilaf

I made this hearty side dish for the Thanksgiving meal so that my vegetarian daughter would have something fun to eat, but all the carnivores loved it, too! I used one of those dark green Japanese pumpkins for the squash, and its earthy flavor and texture worked really well with the wild rice. My little box of wild rice only came to two cups, so I used a cup of brown rice to supplement. This makes a lovely and tasty harvest-season side dish, and I will definitely make it again.

Pecan Pie V

I set out to make a sweet potato/pecan pie for my Thanksgiving dessert, only to realize that my husband hates sweet potato! So at the last minute, I whipped up this pecan pie. It was easy and completely delicious! More caramel-y than the recipes that use corn syrup, which I liked very much. My guests (and husband) also loved it, and it was the first 'leftover' I reached for as I was cleaning up this morning! I only wish that there had been more of the pie filling, because there wasn't quite enough to fill the pie crust. I will definitely make this again.

Quinoa and Black Beans

I served this at a dinner party this weekend, having never made it before, and it was a real favorite. It's easy and tasty, as well as being healthy. I can't wait to make it for my college-age vegetarian daughter when she comes home! I made it exactly as is, but I like the substitutions of peas for corn, or the addition of tomato. Will try the adaptations on future efforts.

Slow-Cooker Pepper Steak

The beef is really tender, and I loved the sauce. I used one green and one red pepper. I would definitely make this again. Be sure to have bread to sop up the sauce!
