Jalapeno Popper Grilled Cheese Sandwich

pretty creative!! I made this as a last minute dinner, so i used italian bread i had on hand & mayo instead of sour cream since its what i had. It did taste just like a jalapeno pepper, i just wasn't crazy about the tortilla chips in the middle, will leave them out next time....but will be a next time! easy & different!

Oven Baked Zucchini Fries

Add pepper and garlic powder and dredge in flour and then egg. Also make sure the zucchini is patted dry to help bread crumbs to stick. Baked at 375 for 15 mins per side.

Ultimate Twice Baked Potatoes

Wrapped the potatoes in foil with butter/salt and baked in over for 1 hour. Be sure to leave a thick skin so they don't fall apart. Added 1/2 block cream cheese to mixture and only used a splash of milk. Can be made ahead and baked in the oven when ready....great for cook outs!

Cheesy Stuffed Shells

Used 1 lb ground beef + 1/2 lb hot sausage so there would be enough meat to stuff shells. Skipped the ricotta (don't care for) used cheddar cheese instead. Sauce on bottom of dish before you put in the shells is a must...very good, will always add spinach into my stuffed shells from now on!

Rempel Family Meatloaf

used ground beef and sausage that's what i had on hand (i drained the meatloaf when it was done cooking) I used 1 cup of cheese, cheese its for the crackers, bbq sauce instead of ketchup and also did a glaze for the top of the bbq sauce, honey and worchesture. very good and will make again!

German Pork Chops and Sauerkraut

I'm not the biggest sauerkraut fan....but being from central pa, i had to give this a try to bring in the new year. I liked that it was easy and could bake in the oven. I did not use the brown sugar. After browning the chops, I deglazed the pan with white wine and poured this over the chops, also added salt/pepper/garlic powder to chops while browning...will make again this way (but only on new years!)

Grill Master Chicken Wings

Our first attempt at cooking wings on the grill. They were fabulous! I didn't use the marinade, will try it next time. Also doubled the sauce, as we wanted them really saucy!! Will make again!

Hot Cheesy Spinach Dip

This was pretty good, didn't realize I didn't have any hot sauce. I used a frozen box of spinach, and 8 oz sour cream instead of the mayo/half. It was ok. I went and got some hot sauce and heated the leftovers on the stove and added the hot sauce....it was awesome!!! Don't skip the hot sauce, I think it makes the recipe! Thanks, will make again!

Garlic Baked Potato

These were awesome!!! I poked the potatoes with a fork to seal in some flavor & wrapped them in foil, baked for a little oven an hour just until soft. Made some cheese sauce & bacon for the top...mmmmm! New way to make potatoes!

Slow Cooker Beef Stew III

pretty good!! Used 1 can of beef broth instead of the water. I don't know why you need to cook this overnight, I put it on at 9am, added the carrots & potatoes about noon, added the onions, celery & garlic about 2 hours later. We were eating about 6pm. Served with some nice sour dough bread!

Ground Beef Enchiladas

There were a winner!! I used green chilis instead of jalapenos and sour cream instead of yogurt. Use the mozzerella cheese...it will suprise you!! Tastes just like a cheese sauce! I put enchilada sauce on the bottom of the pan, I only used 4 tortillas....i stuffed them to the max!! also added some salsa with the beef & cheese mixture. Put the rest of the sauce on top and topped with some more mozz cheese...baked for 30 mins! Absolutely wonderful & will definitley make again!
