Three-Cheese Chicken Penne Pasta Bake

Ok full disclosure: I made a few VERY MINOR modifications so I could use hat I had on hand. At the end, I was licking the pots, the spoons, everything. It was amazing. I modified: - elbow macaroni for penne pasta. (Not whole wheat) - Philly light cream cheese for Neufch√Ętel - marble instead of mozzarella - Aylmer brand garlic and olive oil finely diced tomatoes instead of plain diced tomatoes. - when I poured in my spaghetti sauce, in order to clean out the Bottle I poured in 3-5oz of leftover white wine, swished it in the bottle and dumped that into the sauce Finally, I added 2 tsp of sirracha garlic chili sauce for a tiny kick. Go forth and pasta bake, you won't regret it!!!

Cherry Chocolate Brownie Cheesecake

I just made this for a coworkers recipe and it turned out FABULOUS. I followed the recipe exactly (though I used canned e.b. smith cherry as we don't have lucky leaf here..) and it was super tasty. Served the whole thing to about 15 people with each person raving over how good it was! So no worries here folks - this is a very high quality, quick recipe for cheesecake. Making the brownie bottom is a lot less stressful for those who don't have a food processor too, because you don't have to mulch up the graham cracker crust. I will definitely make this recipe again.

Jalapeno Strawberry Jam

Hey there! This was the first jam I have ever made.. and now I have made it twice. I made it for christmas, and then was asked about a week later to make another batch because my friends loved it so much! The longest thing really, is sterilizing the jars. The jam itself takes little time. It was not as thick as I imagined it would be, but it is very pleasing on crackers with goat or cream cheese. Sweet and spicy with a bit of after burn! Things I did: I doubled my batch. I used pectin powder (as opposed to liquid). I used about 5 jalapenos. I used frozen strawberries. Things I wish I DIDN'T DO: Oh god. I cut the jalapenos without gloves. My hands were burning like I stuck them on the hot stove for HOURS after. Please wear gloves when you cut your jalapenos, even if this has not happened to you before (because its not happened to me but it depends on the jalapenos). If you do get jalapeno burn, you are going to have to put your hands under the hottest water you can stand, and then wash well with dish soap. Just wear the gloves!

Rocky Road Candies

Amazing rocky road recipe! My family voted it "best tasting dessert" in our family-wide friendly competition this thanksgiving! Awesome! I added one thing: a few extra marshmallows scattered on the top and a drizzle of melted peanut butter!

Italian Pork Tenderloin

Super easy and turned our great! I used dried herbs and added some oregano. I cooked 2 pork tenderloins so I added a whole onion, 1 cup 18% cream and 1 cup chicken broth. It made a great sauce for the pasta I served it over. Awesome!

Best Marinara Sauce Yet

I made this last night and it was very good, and very easy for someone who has never made tomato sauce before! I did do as some reviewers suggested and added a tablespoon of brown sugar. I also added more garlic, a few bay leaves, and 1/4 tsp red chili flakes for a tiny amount of heat. This recipe is great and I can see it being SO flexible! Add whatever you want once you have created the base recipe - it will turn out amazing!

Yummy Sweet Potato Casserole

LOVED this recipe, even though I goofed and made it with yams. Can you believe it? The only thing I would do differently next time is change out the white sugar for brown. This is DEFINITELY easier for christmas dinner than trying to make enough candied yams for all your guests! Give it a try :)

Individual Beef Wellingtons

Hey there! This was my first time making this dish and this recipe really helped me out. I wanted to make a full beef wellington, but my hubby brought home cut up prime rib steaks instead! My only comment would be watch the cooking time: I followed the recipe and they were definitely well done. For medium rare I'd suggest sticking the biggest one with a thermometer after 15 minutes -you may find they are done at that point. I definitely accomplished impressing my guests with this one!
