Chef John's Blueberry Muffins

Made these for my son to share with his friends at homeschool coop. The kids loved them! Filled the cups to the hilt like chef John said and got 18 muffins out of the batter. Loved biting into lots of blueberries and the hint of lemon was really nice. My oldest son said they tasted like blueberry cupcakes, which in kid language is a very good thing.

Alfredo Sauce

Really good. I used the parmesan cheese, plus a pre shredded italian cheese blend. Didn't have fresh parsley, so I used the dried version. I also didn't have heavy cream. So I used 3/4 cup of milk plus half a brick of cream cheese. It was yummy. Waaaay better than the stuff you buy in a jar and better than some restaurants.

Pie Crust II

Good flavor and probabaly great with fruit pie, puddings, or custards. But too bready for my pot pie. It soaked up all the broth and made the dish quite dry.

Southern Style Chicken and Dumplings

I used the dumpling part of the recipe and my own creation for the broth and chicken part. My family loved it. Instead of water I use the stock from the simmered chicken and instead of shortening i use butter. Awesome!

Turkey Tetrazzini II

Great as written! I used mozerella cheese instead of parmesan, because that's all I had on hand. I also added sauteed mushrooms and peas and sprinkled the top with cheese and seasoned bread crumbs. Next time I will use the parmasan, leave out the mushrooms (they overpowered the flavor of the dish) and substitute the peas for spinach. I'll also reduce the baking time to keep it a bit more moist.

Spinach Bacon Quiche

Great recipe! I did as others suggested and added one egg and reduced the liquid to 1 cup (well 1/2 cup milk and 1/2 cup heavy cream). I also used 7 slices of pre-cooked bacon because the pieces were pretty small. I did one quiche as written (with those small tweaks) and one quiche using mushrooms instead of bacon (my husband has a sensitive tummy and can't eat pork). I also used a blend of swiss, mozerella, and chedder cheeses. It was delicious!

Quick Biscuits

Mayonnaise Biscuits

Great! Quick and easy to make. So easy you forget it's homemade and not from a box. I didn't have self-rising flour so I added 3 tsp of baking powder and 1 tsp of salt.

Butter Pound Cake

A perfect pound cake recipe. It is dense and moist like a pound cake is supposed to be. It doesn't need any leavening. Just beat the butter and sugar as stated in the directions and it will rise nicely. Instead of vanilla and lemon extract, I used a heaping tbsp of rum extract and 2 tsp of butter extract. I also divided the batter in half and baked it in two loaf pans side by side in the oven. Nothing deceptive here. Just a really good and authentic pound cake.

Best Peanut Sauce

Really good. Tastes nearly authentic. I used a TSP of brown sugar instead of white sugar, 2 tsp of pre-minced garlic, and added a 1/4 tsp of ground ginger to perk of the flavor. My husband and three year old both called it yummy.
