Fluffy Swedish Pancakes

I have made this recipe a million times. I use either soy or almond milk, depending what I have on hand and they come out great! We love to fill ours with a little jam or Nutella. Just make sure to pour these VERY thin, because they do fluff up quite a bit. Also, I use 1/4 cup of butter in the batter and I don't coat the pan with butter, but use Pam instead. Works well and cuts some calories/fat.

Creamy Banana Bread

I made this recipe exactly as written when I needed to use up some cream cheese I had in the fridge. I thought it was a little bland and it came out dry and crumbly. I think it would be much better with an extra banana, brown sugar instead of white, and bake for less time.

To Die For Blueberry Muffins

Delicious! I did use buttermilk in place of the regular milk. This made for very tender muffins. I don't know why the previous reviewer said to use room temperature butter when making the crumb topping, because that will make batter not crumb topping. Use cold, cubed butter and mash it together with the other ingredients using a fork or food processor, until it looks like bread crumbs. Otherwise...yummy!

Four-Bean Salad

This is so good with a few adjustments. First, I increased the vinegar to 2/3 cup and used half balsamic and half white. Also, I left out the pimentos, just because I didn't have any on hand. This was super yummy!

Favorite Peanut Butter Cookies

These are one of those rare cookies that I can NOT put down, no matter how many I eat. Crispy edges, soft middle. My husband ate one dozen in a sitting. I think I won't make these again any time soon, but only because we will go into a sugar coma if I do!

Chewy Coconut Bars

Yummy! I substituted butter for the shortening and increased the coconut to two cups, per the reviews. These are very good. The dough is a little plain but with all the other stuff in there, that's ok. I think next time I'll add some peanut butter to the batter.

Shortbread Cutouts

There is WAY too much flour in this recipe. It barely tastes like shortbread. I ended up adding another stick of creamed butter with 1/2 cup sugar to the dough to get it more to my liking (healthy, I know). Next time I think I'll just decrease the flour to 2 cups and keep everything else the same. I did like that these can be rolled into cutouts. For those whose cutouts fell apart, try chilling the sheet of rolled dough after cutting out your shapes (but before removing the outside dough). This makes it much easier. Also, chill whatever dough you're not rolling out right then.

Coconut Macaroons III

I have made coconut macaroons many times before and am bummed that I decided to try this recipe. The flour makes the middle of the cookie almost doughy and gives it a strange flavor. Usually you would use egg whites as a binding agent instead and I will never vary from that again.

Salsa Chicken

I made this tonight and, while the flavor was great, the directions were horrid. I did ad about a teaspoon of cumin and shook the chicken in a bag with the spices. However, after 30 minutes at 375 degrees the chicken was raw. I ended up broiling it on high for 20 minutes so I could get dinner on the table, next time I'll just broil it.

Pumpkin Cheesecake II

Yummy! I've tried a few pumpkin cheesecake recipes before, but this one is the best! It is quite spicy and delicious and the pumpkin does not overpower it. I ground my own pecans and the crust was devine. It did take an extra 10 minutes to cook.

Grandma's Green Bean Casserole

MMMMMMMM! This was so good! I encorporated some of the other reviewers comments, sauteing the onions in butter to soften and halfing the flower. I mixed 1/2 of the cheese in with the green beans along with 1/2 a can of French's Fried Onions. Then I added the rest of the fried onions in with the butter cracker topping. So good and got rave reviews! I would have given the final version 5 stars, but as written it's a 4.
